Ingredients

  • 1 cup Mayonnaise
  • ½ teaspoon Lemon zest
  • 1 Tablespoon Lemon juice
  • ½ teaspoon Garlic powder or 1 clove garlic
  • Pinch Salt to taste

Instructions

  • Add all ingredients to a mixing bowl and mix vigorously with a whisk.
  • Once fully mixed, store in a glass jar to let the flavors develop, or serve and enjoy!

Notes

  • Keep tasting the aioli and adjust as necessary. You can always add more garlic and lemon juice, but it's harder to take out!
  • Thin the aioli by adding a mild oil, such as olive oil or avocado oil. Remember to whisk very well (you can even use a food processor or blender for this) to emulsify the oil and make it creamy!
  • Adjust the flavor by adding herbs such as fresh dill, or a pinch of cayenne pepper for heat! Alternatively, mix in a finely chopped chipotle pepper for chipotle aioli.
  • Choose the mayo according to your dietary needs. Everything else in this recipe is totally vegan and dairy free, and it will taste delicious using vegan mayo, too!
