Add all ingredients to a small bowl, and mix well.
1 teaspoon Salt, 1 teaspoon Black pepper, 1 teaspoon Smoked paprika, 1 teaspoon Garlic powder, 1 teaspoon Italian seasoning, ¼ teaspoon Red chili flakes
Sprinkle over oil-drizzled vegetables before roasting.

You can adjust the seasoning ratios as desired, or add in extra spices! I like adding cayenne if I want a bit more spice, and for mild, buttery vegetables, I leave out the Italian seasoning.
Make sure to use a quality flake salt - I like Maldon sea salt, but you can use any nice flaky salt. It makes a much bigger difference than you'd ever imagine, with a better flavor and a nice crunch.
Adding curry powder to the mix is perfect for a twist on the recipe! I like making a dipping sauce of curry powder and mayonnaise to serve with curry vegetables.
