Ingredients

Pumpkin Custard Filling

  • 2 large eggs beaten
  • ¾ cup light brown sugar
  • ¼ cup maple syrup
  • cups pumpkin puree
  • ½ cup evaporated milk
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • 2 teaspoon pumpkin pie spice
  • ¼ teaspoon salt

Cobbler Topping

  • 1 cup all-purpose flour 4.5 ounces
  • ¼ cup powdered sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ stick cold butter 2 ounces
  • ¼ cup evaporated milk

Cinnamon Sugar Topping

  • 2 Tablespoons turbinado sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Spiced Butter Toffee Sauce (optional)

  • 1.5 cups white sugar
  • cup water
  • 1 cup (2 sticks / 1 cup) unsalted butter, cubed
  • 1 cup heavy cream
  • 1 teaspoon pumpkin spice
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease a pie dish with butter.
  • Whisk eggs, sugar, and maple syrup together. Add pumpkin puree, evaporated milk, and vanilla, and mix well. Finally, sift in flour, pumpkin spice, and salt, and whisk until only just incorporated.

  • Pour the mixture into the prepared pie dish and bake for 20 minutes.

How to Make Cobbler Topping

  • While the custard bakes, mix flour, powdered sugar, baking powder, and salt in a large bowl. Add butter and use your fingertips to press it through the flour mix until you end up with very small lumps (you can use a pastry cutter if you have one!).

  • In a separate small bowl, mix cinnamon sugar topping ingredients and set aside.

  • As soon as the custard has baked for 20 minutes, add the evaporated milk to the cobbler topping and mix through to make a dough.

  • Starting from the outside edges of the pie dish, carefully sprinkle the cobbler topping over the custard in small clumps.
  • Now sprinkle the sugar topping over top.
  • Place it back in the oven for 40 minutes, turning halfway through so that it bakes evenly.

For the Spiced Butter Toffee Sauce

  • Place sugar and water in a heavy-bottom saucepan over medium heat and stir gently until the sugar dissolves. Bring it to a boil and stop stirring. Allow it to boil for around 7-8 minutes without stirring. The temperature should reach 250 degrees Fahrenheit on a candy thermometer, and it should be amber gold in color.

  • Add butter. Whisk it in quickly until fully combined but make sure not to splash it. Now carefully add the cream (be careful as it may splatter and bubble up) and do the same until mixed through.

  • Add spices and vanilla. Allow it to boil for 3-5 minutes until thickened and glossy. It should be a deep golden brown color. Allow to cool a little before use.

  • Pour over cobbler, and enjoy!
