Garlic Butter Noodles with Shrimp

  • 8 ounces spaghetti
  • 3 Tablespoons butter
  • 2 Tablespoons avocado oil
  • 1 pound large shrimp peeled and deveined, tail off
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • cup dry white wine
  • 3 garlic cloves minced
  • 2 Tablespoons lemon juice
  • Zest from one lemon
  • 1 teaspoon Italian seasoning
  • 3 Tablespoons parmesan cheese freshly grated
  • 2-3 Tablespoons chopped parsley

Instructions

  • Cook pasta according to package directions. Add a pinch of salt to the water.

  • In a saute pan over medium heat, add butter and avocado oil. Allow the butter to melt and bubble.

  • Once the butter stops bubbling, add shrimp, salt, pepper, and red pepper flakes.

  • Cook the shrimp on both sides for 2-3 minutes per side, or until pink and cooked through. Be careful not to overcook the shrimp.
  • Add white wine, garlic, lemon juice, lemon zest, and Italian seasoning to the pan. Simmer for 1 minute.

  • Drain the pasta and add it to the pan. Toss to combine.
  • Remove the saute pan from the heat and top with Parmesan cheese and parsley. Serve and enjoy!

Notes

  • Frozen shrimp is very convenient and tastes great. I almost always use frozen shrimp for the convenience, so feel free to do the same.
  • Experiment with the ingredients. You don't have to use spaghetti pasta; you can use fettuccine, linguine, or any favorite noodle of yours. I find the longer pasta noodles to work best with garlic shrimp pasta.
  • It's not necessary to use alcohol if you want to leave it out. If you do use white wine, use a quality drinking wine for best flavor. If not, try using white wine vinegar, champagne vinegar, apple cider vinegar, or an alcohol-free cooking wine as you prefer. You can also use chicken stock or broth, but the taste will not be as sharp and flavorful.
  • If the shrimp is frozen, allow it to defrost overnight in the fridge. I place the whole bag on a plate in the fridge. Place the shrimp on a few paper towels to soak up all the excess water.
