Notes

  • If peaches aren't in season, grilled pineapple is absolutely delicious with this salad recipe! You can use canned pineapple or fresh, but fresh will have the best flavor.
  • If you prefer a milder cheese, I recommend mozzarella pearls. Alternatively, change up the flavor with goat cheese crumbles. Goat cheese is incredible with peaches.
  • To make a nut-free salad, swap out the almonds for toasted pine nuts. Alternatively, for an alternative to almonds, pecans are excellent.
  • Try out different lettuces! Baby arugula has a nice bitter flavor that balances out the sweet, but it's also lovely with spinach or simple mixed greens.
  • Balsamic glaze or balsamic vinaigrette is also great to use as a dressing.
  • Basil leaves, fresh mint, or other fresh herbs are also a nice addition to this salad. Salads are the perfect way to make use of fresh herbs!
  • Add more savory flavors by including sliced red onions or a sliced grilled meat.
