Cut the peaches into slices (approx 8 slices) and toss gently with oil. Grill for a couple minutes each side until you have gentle grill marks. Carefully take off the grill and set aside.
1 peach, ½ Tablespoon olive oil
Place the arugula in the bottom of a wide bowl (or 2 smaller, if you prefer to divide).

Top with sliced cherry tomatoes.

Add your grilled peaches over top.
Whisk together the dressing ingredients and drizzle over the top. Add feta cheese over top.
If peaches aren't in season, grilled pineapple is absolutely delicious with this salad recipe! You can use canned pineapple or fresh, but fresh will have the best flavor.
If you prefer a milder cheese, I recommend mozzarella pearls. Alternatively, change up the flavor with goat cheese crumbles. Goat cheese is incredible with peaches.
To make a nut-free salad, swap out the almonds for toasted pine nuts. Alternatively, for an alternative to almonds, pecans are excellent.
Try out different lettuces! Baby arugula has a nice bitter flavor that balances out the sweet, but it's also lovely with spinach or simple mixed greens.
Balsamic glaze or balsamic vinaigrette is also great to use as a dressing.
Basil leaves, fresh mint, or other fresh herbs are also a nice addition to this salad. Salads are the perfect way to make use of fresh herbs!
Add more savory flavors by including sliced red onions or a sliced grilled meat.
