Loaded Pulled Pork Nachos

Ingredients

  • 1 bag tortilla chips
  • 2 cups pulled pork
  • 2 cups shredded cheese I used Mozzarella
  • ¼ cup cotija cheese
  • 1 small jalapeno sliced
  • 1 small avocado diced
  • 1 small tomato diced
  • 1 medium lime freshly squeezed
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped, for garnish (optional)
  • cup sour cream or Mexican crema (optional)
  • ½ cup BBQ sauce

Instructions

  • Preheat the oven to 400°F. Spread ½ a bag of tortilla chips evenly in a skillet or baking sheet. Top with half of the pulled pork.

  • Cover evenly with half of the shredded cheese. Repeat that same process again with the remaining tortilla chips, pork, and cheese.

  • Place in the oven and bake for 5-10 minutes until the cheese is melted and the chips are crispy.
  • While the nachos are in the oven, it's a great time to chop your jalapeño, avocado, tomato, and red onion. Remove from the oven and add your favorite toppings. Serve and enjoy!
