Pulled Pork Quesadilla

Leftover pulled pork has never tasted more delicious than in my pepper-stuffed Pulled Pork Quesadilla recipe! It's a kid-tested favorite!

Sauteed Peppers and Onions

  • 2 Bell peppers of choice, sliced
  • 2 Onions sliced
  • 2 Tablespoons Olive oil
  • ½ teaspoon Garlic powder
  • Salt and pepper to taste

Pulled Pork Quesadillas

  • 4 Flour tortillas
  • 2 cups Pulled pork click for recipe
  • 2 cups Shredded cheese
  • Salt and pepper to taste

Instructions

  • First, prepare the sauteed onions and peppers. Slice the bell pepper and onions, then add them to a skillet over medium heat. Add the garlic powder, and cook until golden brown, about 7-9 minutes. Season to taste with salt and pepper.

  • Spray a pan or griddle with nonstick spray on medium-low heat. Place the tortillas in the pan, and top them with pulled pork, cheese, sauteed peppers and onions.
    4 Flour tortillas, 2 cups Pulled pork, 2 cups Shredded cheese, Salt and pepper
  • Top with another layer of cheese, then a second tortilla. Cook until the cheese melts, then carefully flip. Letting the cheese melt makes flipping them much easier!
  • Cook for 5-8 minutes, until the cheese is completely melted and the tortillas are a nice golden brown on each side. Serve, and enjoy!

Notes

  • For extra flavor, try using garlic butter instead of nonstick spray in the pan the tortillas are being cooked in!
  • Not a fan of peppers? Try out my foolproof caramelized onions for a twist on these quesadillas!
  • I like the mild flavor of mozzarella paired with BBQ pulled pork, but you can also use other melty cheese like colby jack, pepper jack, cheddar, and even gruyere or swiss.
  • Corn and flour tortillas will both work great. You can also use gluten-free tortillas, just be careful as they can burn easily.
