First, prepare the sauteed onions and peppers. Slice the bell pepper and onions, then add them to a skillet over medium heat. Add the garlic powder, and cook until golden brown, about 7-9 minutes. Season to taste with salt and pepper.
2 Bell peppers, 2 Onions, 2 Tablespoons Olive oil, ½ teaspoon Garlic powder, Salt and pepper
Spray a pan or griddle with nonstick spray on medium-low heat. Place the tortillas in the pan, and top them with pulled pork, cheese, sauteed peppers and onions.
4 Flour tortillas, 2 cups Pulled pork, 2 cups Shredded cheese, Salt and pepper
Top with another layer of cheese, then a second tortilla. Cook until the cheese melts, then carefully flip. Letting the cheese melt makes flipping them much easier!
Cook for 5-8 minutes, until the cheese is completely melted and the tortillas are a nice golden brown on each side. Serve, and enjoy!

For extra flavor, try using garlic butter instead of nonstick spray in the pan the tortillas are being cooked in!

I like the mild flavor of mozzarella paired with BBQ pulled pork, but you can also use other melty cheese like colby jack, pepper jack, cheddar, and even gruyere or swiss.
Corn and flour tortillas will both work great. You can also use gluten-free tortillas, just be careful as they can burn easily.
