BBQ Pulled Pork Quesadilla
I love pulled pork. Whether it’s in tacos, piled on nachos, topping a sandwich with coleslaw, or stirred into hearty chili, you can’t go wrong. And of course, we all know everything is better with cheese!
So, why not combine these two loves into shredded pork quesadillas? Filled with melty cheese, crisp and flavorful sauteed peppers and onions, and mouthwatering BBQ pulled pork, this is one recipe for pulled pork quesadillas you’ll be looking for any chance to make again!
Fortunately, it’s very simple! Just sauté some veggies, assemble the quesadillas, and you’re ready to go. It’s the perfect way to get little ones eating their veggies with a meal they’ll still love, and the ultimate recipe for using up leftovers. A win-win you’ll love!
Pork Quesadilla Ingredients
- Pulled pork
- Flour or corn tortillas
- Mozzarella cheese
- Salt and pepper
- Bell peppers
- Olive oil
- Onions
- Garlic powder

You can also use any leftovers you have on hand, or pre-packaged pulled pork from the store. This pork quesadilla recipe works for leftover pork chops, too, if you slice them thinly enough. It all works! Try them with my Sauce for Quesadillas.
How to Make Pulled Pork in Tortillas
- First, prepare the sauteed onions and peppers. Slice the bell pepper and onions, then add them to a skillet over medium heat. Add garlic powder, and cook until golden brown, about 7-9 minutes. Season to taste with salt and pepper.
- Spray a pan or griddle with nonstick spray on medium-low heat. Place tortillas in the pan, and top them with pulled pork, cheese, and the sauteed peppers and onions.
- Top with another layer of cheese, then a second tortilla. Cook until the cheese melts, then carefully flip. Letting the cheese melt makes flipping much easier! Make sure to keep the heat medium-low so the tortillas don’t brown too quickly.
- Cook for 5-8 minutes, until the cheese is completely melted and the tortillas are a nice golden brown on each side. Serve, and enjoy!

- For extra flavor, try using garlic butter instead of nonstick spray in the pan the tortillas are being cooked in!
- Not a fan of peppers? Try out my foolproof caramelized onions for a twist on these quesadillas!
- I like the mild flavor of mozzarella paired with BBQ pulled pork, but you can also use other melty cheeses, like colby jack, pepper jack, cheddar, and even gruyere or swiss.
- Corn and flour tortillas both work well. You can also use gluten-free tortillas, but be careful as they can burn easily.

Any cheese that melts well will do wonderfully in quesadillas, so it depends on the flavor you prefer! I like to use colby or pepper jack, cheddar cheese, and mozzarella cheese. Mozzarella is my favorite for pork quesadillas as its mild flavor compliments the flavorful pork!
Quesadillas are just begging to be stuffed with all your favorite foods! I like to add sauteed vegetables, especially mushrooms, onions, and peppers. You can also add spinach, and of course, all your favorite sliced or pulled meats! They’re the perfect way to use up taco night leftovers!
