How was your Mother’s Day? What was the most memorable part of your day?
I enjoyed a Mother’s Day like never before. It was the first Mother’s Day I have ever spent without any of my children. Riley had a wedding that day, Ronnie was at a bachelor party, Alexandra had plans for a weekend getaway, and Reis and Jordin had plans with her family. So, what did Ron and I do? We decided to stay at our mountain house for a couple more days!
I would not want to do this every year, but this year was a nice change of pace. Ron made reservations for a Mother’s Day brunch, which was so delicious and peaceful. I love a good omelet bar, and this one did not disappoint. Let me tell you about the turkey carving station! It was the juiciest, tastiest turkey I’ve ever had, and the peach compote complemented it perfectly!
The seasoning really stood out to me. I am drooling as I write about it now and am determined to spend time in the kitchen this week trying to duplicate the recipe to share with you. Fingers crossed that I nail it!
After our relaxing weekend, we came home to so many special celebrations. I love celebrating special moments like these with my family. We wrapped one evening full of love for Mother’s Day, Vo’s birthday, Ron’s birthday, Julia’s birthday, and lastly, to celebrate Julia becoming a Pediatric Nurse Practitioner in Oncology!
Oh, and the best news ever! We celebrated Jordin and Reis closing on their new home! It was truly a perfect celebration filled with laughter and delicious food.
What a fun night. Ron prepared ribeye steaks and salmon with baked potatoes, sweet potatoes, broccoli, and a tasty salad with homemade balsamic vinaigrette. It was a simple meal, but it filled my heart with so much joy and love.
