There’s something so special about one-on-one time with our kids. When you have four children, it can be a challenge to carve out quality moments with each of them. That’s why we were beyond thrilled when Riley surprised us with a visit to Georgia! It had been the longest stretch I’ve gone without seeing my baby, and I couldn’t wait to make him feel extra special.

Of course, I greeted him with what else? Pepperoni Pizza Dip! This dish holds a special place in our family- it’s more than just an appetizer; it’s a little bite of nostalgia. Seeing him devour it brought back so many memories of Sunday suppers and game nights around the table. That’s what food is all about, isn’t it? For dinner, we fired up the grill and made one of his favorites: Grilled Baby Back Ribs with Grilled Baked Potatoes (remind me to share that recipe with you soon- it’s a must-try!). We made extra potatoes, knowing full well they’d make the perfect home fries the next morning.
Now, if you know Ron, you know scrapple was bound to make an appearance. It’s one of Riley’s absolute favorites, and while we don’t have an outdoor kitchen in our mountain house yet (keyword: yet!), Ron made do with an old-fashioned electric griddle. And let me tell you- it was perfect. I actually bought this one on Amazon for an affordable price years ago, and it’s truly the best, even beyond breakfast! Eggs, crispy potatoes, and scrapple sizzling away… the kind of breakfast that fuels the best kind of mornings.
After filling up on breakfast, Riley did what any smart person would do- relaxed in the hammock, taking in the peaceful mountain air. Moments like these remind me how important it is to slow down and soak in every second. Time flies, and these little visits, these shared meals, these simple joys- they’re the memories that last a lifetime.
I hope this inspires you to take a moment this week to sit down with your loved ones, share a meal, and savor the time together. After all, there’s no better way to show love than through food.
