It has a perfectly crisp crust, juicy center, and uses simple-yet-flavorful ingredients. You may never go back to roasting beef in the oven after trying my air fried chuck roast!

Air Fried Chuck Roast
I bet you’ve made this mistake too! Just the other day, I prepped a big casserole dish of scalloped potatoes, a whole tray of roast vegetables, and a gorgeous chuck roast to top it all off. Then I went to pop it all into the oven… and realized all three recipes had different cook times, temperatures, and oven space requirements. Oops.
That’s when I thought to use my air fryer. It’s basically a tiny convection oven, and convection ovens are famous for their roasts, so it must be a perfect choice, right? Right! Sure enough, I set that roast in the air fryer basket, did some quick recipe conversions, and… Well, wow!
The initial tempt wasn’t perfect, of course, but after some refinement I figured out a foolproof air fryer chuck roast recipe – the very same one I’m sharing with you now! It turns out juicy and rich, with a mouthwatering crust any oven-baked roast would be jealous of.

Air Fryer Pot Roast Ingredients
- Beef Chuck Roast: The star of the show! Try and pick out a chuck roast with a nice amount of even marbling for a fall-apart candy of a roast. Bone-in or boneless both work great!
- Olive Oil (Substitutions available): Olive oil is classic for pairing with beef, but you can also use other oils like coconut, avocado, or vegetable oil.
- Worcestershire Sauce (Substitutions available): Worcestershire sauce has a complex, savory flavor that does a whole lot of heavy lifting when it comes to beef roast! If you don’t have any, you can substitute A1 Steak Sauce or Soy Sauce.
- Salt and Pepper: As always, it’s important to use freshly cracked black pepper and a quality, flaky salt like sea salt or kosher salt. Table salt is too small to bind to the meat well and can leave a metallic aftertaste.
- Garlic Powder: Due to the long cook time, I wouldn’t recommend using fresh garlic. It tends to burn and turn bitter if cooked for too long.
- Onion Powder: You can also use dried onion flakes, but I prefer the way powder coats the surface of the meat.
- Dried Thyme: You can use fresh or dried! I like the convenience of dried, and the flavor of fresh; use what you have on hand. If you’re using fresh herbs, just make sure to add more than you’d use for dried.
- Dried Rosemary: You can also use fresh rosemary for a more subtle, nuanced flavor. If you’re using fresh, just remember to add more; I like chopping up a whole sprig!
- Paprika: Paprika adds that little special something to this recipe! For even more depth of flavor, used smoked paprika; it has a rich taste you won’t want to miss out on!
How to Air Fry Chuck Roast
- To make sure cleanup is easy, line the inside of the air fryer with aluminum foil. Then preheat it to 390°F. Using aluminum foil will allow you to save the drippings for gravy, and will keep the air fryer clean so you don’t have to scrub it as much.
- In a small bowl, combine the Worcestershire sauce and the olive oil, and set it aside. This simple sauce packs a punch!
- In a separate bowl, combine all the dry seasonings, then mix them well and set them aside.
- Place the roast on a cutting board, and rub it all over with the olive oil mixture. I like to pour the sauce over the roast, then turn it a few times to get all the sides coated. Then, sprinkle on the dry seasoning mix and pat it down so they stick.
- Place the roast in the air fryer, and roast for 15 minutes to give it a nice sear. Then flip the roast using tongs, and set the heat down to 320°F. Cook another 45-60 minutes, depending on the size of your roast.
- Remove from the air fryer after the internal temperature reads at least 145°F. Let rest 10 minutes, then slice and enjoy!
Isabel’s Top Tip
If cooking a bone-in chuck roast, make sure to measure the internal temperature right up next to the bone! Bone-in roasts tend to have the best texture and flavor, but need a little extra cooking time to ensure the bone is fully cooked.
Air Fryer Roast Beef Tips
- Adding aluminum foil helps make cleanup a breeze! It also collects all those incredible juices, letting the roast cook in them instead of losing moisture by letting it drip to the bottom.
- Save the drippings and bottle them up for later- or, use them in a mouthwatering Pot Roast Gravy!
- Make sure to preheat the air fryer to ensure it sears nicely. If it’s not preheated, the 15 minutes of cooking time to sear the outside of the roast may need to be extended.
- Always check the internal temperature with a meat thermometer. You want to hit at least 145 °F (medium-rare) to ensure the meat has cooked through.

Storing and Reheating
Refrigerator: Leftovers should be sliced and stored in an airtight container in the fridge for up to 4 days.
Freezer: Cooked pot roast can be frozen! Wrap the individual slices in aluminum foil before placing all of them in a freezer-safe bag, then freeze for up to 3 months.
Thawing and Reheating: Thaw frozen pot roast in the fridge overnight, then reheat in the oven or air fryer at 350

Yes! You can absolutely cook bone-in roasts in the air fryer. I’ll often choose bone-in over boneless, as bone-in tends to be more budget friendly and in my experience has a more tender chew and richer flavor. Just be sure to check the internal temperature around the bone, as bone-in roasts tend to need a longer cooking time.
If your roast fits in the air fryer, air frying is a perfect choice for chuck roast! Air fryers are, essentially, convection ovens that sit on the counter. Because of this, they cook roasts like a convection oven would, circulating hot air around the roast instead of radiating heat from a heating element. This creates an unbeatable crust that might just top oven-roasted chuck roast!

- 2 lb Beef chuck roast
- 1 Tablespoon Olive oil
- ½ Tablespoon Worcestershire sauce
- 1 Tablespoon Black pepper
- ½ Tablespoon Salt
- 1 Tablespoon Garlic powder
- 1 Tablespoon Onion powder
- 1 teaspoon Dried thyme

Instructions
- Preheat: Line the inside of your air fryer with aluminum foil. Preheat the air fryer to 390 degrees F.2 lb Beef chuck roast

- Roast: Place the roast in the air fryer and cook for 15 minutes. Then, carefully flip the roast and air fry at 320 degrees for another 45-60 minutes, depending on the size of your roast.
- Rest: Remove your roast from the air fryer, and allow it to rest for at least 10 minutes. Then, slice the serve with your favorite sides!

Hi there! Yes, you could definitely make it in the oven. I would recommend following my oven instructions over at my Beef Chuck Roast Recipe. It’s my most popular chuck roast and is just delicious, I make it all of the time. As for the broccoli cheese soup, I don’t, but I’ll look into that!
