After so much stress, Ron and I were so excited to go and spend time with the grandkids! There is nothing quite like visiting them to make everything better. The love they give you is so unconditional, it just warms your heart.
We had a blast visiting. Puzzles, tubby time, and even getting haircuts was a fun time! Well, maybe for us. I’m not sure Rory and Aiden loved it. I might be showing my age here, but this kid’s hair salon was incredibly different from the barger shop my three boys grew up going to. This was like a visit to a small, packed amusement park! There were rides, balloons, ice cream, and candy. Who wouldn’t want to get their hair cut? Maybe these two.
My son-in-law, Shamus, is an excellent cook. I love watching him in the kitchen! It is truly his passion. He made us the most fantastic meal while we were visiting. For starters, he served us perfectly seared scallops. I have yet to perfectly sear scallops; it’s not easy! After that, he grilled the most delicious salmon and made the shrimp francese I told you about last week. I’m working on developing it for the website, and it’s so great to have someone else cook the recipes I’m in the process of refining. This helps me perfect them to share with you! I’ve been telling Shamus I’m going to recruit him to become a contributor to my blog. 😂
Really, I can’t wait to share this recipe with you. A couple more test runs in my kitchen, and it will be perfect! Speaking of recipe development, I had a doozy this week. I’m trying to come up with more low-carb recipes to share on the site; especially those that include cottage cheese. The other day, I made the most delicious squash and cottage cheese bake. It tasted incredible, but it was a total flop when I tried to flip it over… note to self: use parchment paper, Isabel!
I bet you thought my job was easy! But, this kind of stuff happens all the time. We test every recipe numerous times to make sure it’s perfect before publishing it. Please stay tuned for this yummy dish once it’s ready to share! It tastes fantastic, but no one would make it with how it looked!

On another note, I’m obsessed with a new recipe I shared with you recently. You know I’m a huge fan of short ribs, and these red wine braised short ribs are out of this world! I didn’t think anything could ever beat my Korean braised short ribs recipe, but honestly, this might be my new favorite. Let me know if you try it out!
Thanks so much again for the outpouring of concern for Ron. He still has pain in his chest and is a little short of breath, but he’s recovering well and getting better every day. We are so incredibly grateful.
