It’s no secret that I’m kind of obsessed with roasted veggies. They’re just so easy! When I don’t want to cook but also want a dinner I can feel good about, it’s roasted vegetables I turn to, from my favorite roasted asparagus to eggplant, carrots, and, of course, potatoes.
I sincerely believe that everyone I know who claims not to like vegetables hasn’t tried them roasted. Slice up some vegetables, toss them in olive oil and my veggie seasoning, and roast them for at least 30 minutes at 350°F, until golden brown and butter soft. That’s the secret to perfect roasted veggies!
This is the secret to how to get kids to eat vegetables! It’s slow roasting and my perfectly balanced, flavorful seasoning. Try it out, and you’ll have a hard time cooking veggies any other way!

No matter what kind of vegetable you’re planning on roasting, it’ll taste better with my veggie seasoning. I’ve used it on everything from red bell pepper to roasted broccoli, brussels sprouts, and roasted sweet potatoes. No matter what, it’s the perfect fit!

I love it when I can make my own homemade seasonings using what I already have on hand instead of buying a more expensive blend at the store. It’s much more budget-friendly to mix your own!
Vegetable Seasoning Ingredients
- Kosher Salt: A nice flakey salt is key for seasoning vegetables. I recommend kosher or sea salt. It makes a huge difference in the flavor and texture, bringing out the natural sweetness of vegetables!
- Black Pepper: Freshly cracked black pepper is ideal, but honestly, a little pre-ground will work great too.
- Smoked Paprika: I highly recommend smoked paprika as a spice to just keep around. If you don’t have any, feel free to use regular paprika!
- Garlic Powder: The sweet, mellow flavor of garlic powder brings dimension to roast veggies without overpowering them like fresh garlic can.
- Italian Seasonings: I like to add a sprinkle of my homemade Italian seasoning blend, but you can skip this if you prefer a more pure vegetable flavor. Fresh herbs would also be a great option, especially chopped rosemary or fresh basil and thyme.
- Red Chili Flakes: I love adding a bit of heat with crushed red pepper! If you prefer no spice, leave them out; it’ll still taste great.
Using Olive Oil for Roasting Veggies
While not part of the seasoning, I highly recommend drizzling your veggies with extra virgin olive oil before roasting them! I always roast my veggies at 325° to 350°F, which is right below the smoke point. This leaves the olive oil tasting rich and fresh, and it turns the texture of the veggies to butter.
How to Season Vegetables
1: Combine Ingredients
Add all ingredients to a small bowl, and mix until well incorporated.
2: Season Veggies
Toss veggies in olive oil, or drizzle oil over larger slices of vegetable laid out on a baking sheet lined with parchment paper. Then sprinkle seasoning over the veggies.
3: Roast & Serve!
Roast veggies at 350°F until soft and starting to turn golden brown, flipping halfway and adding more seasoning. Then serve, and enjoy!

- You can adjust the seasoning ratios as desired, or add in extra spices! I like adding cayenne if I want a bit more spice, and for mild, buttery vegetables, I leave out the Italian seasoning.
- Make sure to use a quality flake salt – I like Maldon sea salt, but you can use any nice flaky salt. It makes a much bigger difference than you’d ever imagine, with a better flavor and a nice crunch.
- Adding curry powder to the mix is perfect for a twist on the recipe! I like making a dipping sauce of curry powder and mayonnaise to serve with curry vegetables.

Make extra and store it! I like to make a big batch of this seasoning. That way every time I want a roast vegetables side dish, I can just toss them in oil and sprinkle on my pre-made seasoning, then pop them in the oven!
Storing Homemade Vegetable Seasoning
Every ingredient in this seasoning is shelf stable! Because of that, you can store it in a spice jar or a plastic bag in the pantry pretty much indefinitely. If you use fresh herbs, freeze the seasoning until ready to use.
Vegetable Seasoning Mix FAQ
The red chili flakes in this recipe pack a little bit of heat, so if you don’t want any spice, leave them out. It will still have a deliciously complex flavor.
Pretty much all of them! I’ve tried this seasoning on carrots, cauliflower, turnips, radishes, squash and zucchini, potatoes, and even chick peas and cabbage. You really can’t go wrong with this simple, flavorful blend.
