Well… I’m not sure I’ve ever received so many messages after a newsletter!
Last week’s email certainly got your attention — and your questions! So many of you reached out asking if the picture of me holding the Easter ham was from this year because (and I quote!) I looked heavier.
First, let me say — thank goodness for thick skin and a good sense of humor! I wasn’t upset at all. In fact, you all made my day.
Full disclosure: We plan a lot of our Sunday Supper content ahead of time, and we didn’t have a fresh picture of me holding a ham this year. So we pulled one from last year’s folder. Honestly, when I saw it, I thought it might have been two years ago — that's how different it felt to me!
The best part? Your comments reminded me just how much progress I’ve made.
Sometimes, it’s so easy to be hard on ourselves, isn’t it? We want to see big changes overnight. But your kind words were the best inspiration. Working at it little by little every day really does add up.
Thank you all for the inspiration. I knew I could count on you to hold me accountable.
I’m absolutely in love with this time of year — my walks seem a little more beautiful, the air feels lighter, and it inspires me to keep going every single day.
Although I skipped hosting a true Easter dinner this year, we still made time to gather around the table. This week, I had my kids and my parents over for a belated celebration, and we grilled a ham that turned out absolutely amazing — juicy, flavorful, and cooked to perfection. We were all in love with it!
And because I can never serve ham without it, I made my favorite fettuccine alfredo. Years ago, Ron’s mom introduced me to the magic of pairing ham with Alfredo, and ever since that first bite, I was hooked. To this day, I still use her recipe… with one tiny addition. 😉 IYKYK! (If you’ve tried it, you know exactly what I’m talking about — it's the secret to the creamiest Alfredo sauce you’ll ever taste.)
We rounded out the meal with my parents' absolute favorite pineapple casserole and a dish of green bean almondine — every last bite was gone!
It was simple. It was delicious. And it was yet another reminder that time around the family table is sacred — no matter when or how you celebrate.
