This Sloppy Joe Casserole is a Family Favorite
Growing up, my kids weren’t the biggest fans of Sloppy Joes – but that all changed when I started making them from scratch instead of out of a can. Personally, I like them with canned sauce too, but homemade is always the best! But by far, our favorite way to enjoy Sloppy Joes has always been with this Sloppy Joe Casserole.
Perfect for busy weeknights (and with four kids, I know how that goes), my recipe for Sloppy Joe Casserole combines effortless preparation with flavors everyone will love. Using everyday ingredients like ground beef, pasta, and a mix of cheeses, it’s a stress-free way to bring a comforting meal to your table!
Plus, it’s customizable! Whether you use a homemade Sloppy Joe sauce or a store-bought one, the outcome is consistently fantastic every time, and you can mix in your favorite ingredients. Give it a try for your next family dinner!

Recipe for Sloppy Joe Casserole
- Turn on your oven and preheat it to 375°F. While the oven heats up, cook the ground beef in a large pot or skillet over medium heat. Brown the beef for 7 minutes or until cooked through, then drain any excess grease.
- Add the uncooked pasta, vegetable broth, Sloppy Joe sauce (or homemade sauce ingredients), and corn. Simmer for 15 minutes, stirring it now and then. If you prefer, you can cook until the pasta is al dente (just slightly underdone).
- Mix in the Velveeta cheese until it’s fully blended, and then transfer the ground beef mixture to a 9 by 13-inch casserole dish.
- Sprinkle with shredded cheddar cheese, then bake for 10 minutes or until the pasta is tender.
- Garnish your casserole with parsley (optional) before serving. Enjoy!
Recipe Tips
- Instead of ground beef, consider using ground chicken, turkey, or even vegetarian plant-based alternatives!
- Use canned or homemade Sloppy Joe sauce! When I have the time, I love making my own, but other nights are busier and canned sauce is just what I need.
- Experiment with different cheeses! While Velveeta adds creaminess, other cheeses like Gouda or Colby Jack cheese can offer new flavors.
- Use your favorite type of noodles for this casserole, or anything you have on hand! I swap between egg noodles, penne, rigatoni, or rotini.
- Add your choice of extra vegetables! I sometimes include diced onion, green bell peppers, green beans, or garlic.
Storing and Reheating Leftovers
Allow your casserole to cool completely to room temperature. Once cooled, transfer any leftovers into an airtight container and store in the fridge for up to 3-4 days.
To freeze leftovers, transfer them to a freezer-safe container and store for up to 2-3 months. Thaw the casserole overnight in the fridge before reheating. Reheat in the oven at baking temperature or in the microwave in short intervals.
FAQs
