What is Wagyu?
Wagyu beef refers to beef from a Japanese breed of cow with naturally well-marbled meat, resulting in beef that is both incredibly tender and uniquely flavorful. There are other more budget-friendly varieties of wagyu, like Australian wagyu and American wagyu. Any variety of ground wagyu will work for wagyu burgers.
How do you make the perfect Wagyu beef patty?
Wagyu burgers are all about the meat, so it's important to make the perfect beef patty! And if you've spent time grilling, you know there's more to the perfect burger patty than just flattening beef into a disk.
- Temperature: Make sure to keep burger patties chilled by keeping them in the refrigerator right up until you start grilling. This will keep the fat from melting too early!
- Mixing: It's incredibly important to not over-mix burger meat! Mix the meat for only 35-40 seconds. Once the meat is sticky, it's ready to form!
- Forming: Form the patties into 1-inch-thick disks that are 1 inch wider than your buns, then press an indent in the center. This will ensure that when the burger puffs up, it'll form a perfectly flat patty!
- Seasoning: Wagyu beef is extremely rich, flavorful and earthy, so it doesn't take much seasoning. I recommend simple salt and pepper.
How to Season Wagyu Beef
- You can use Japanese wagyu, Australian wagyu, or American wagyu ground beef.
- Simple kosher salt or sea salt flakes, and black pepper, is the only seasoning you need for wagyu ground beef. Wagyu beef is naturally flavorful, and to draw out the flavor of the beef you want to be certain not to over-season it.
- When mixing the beef into patties, be careful not to over-mix. If you over-mix ground beef, it becomes dense and will give the burgers a tougher texture. To keep them light and juicy, mix only as much as necessary.
- If you prefer thin burgers, season them after forming them into patties. If you like thicker burgers, season the meat mixture as you form the patties so the patties are seasoned throughout.
Wagyu Burger Toppings
For a wagyu beef burger, keep the toppings simple! In this recipe, I'm using only lettuce, tomato, bacon, and cheese. You can keep it even more simple and make a simple cheeseburger. Stronger flavors, like the caramelized onions of my (also amazing!) mushroom swiss burger, aren't necessary for a wagyu burger.
How to Grill Wagyu Burgers
- Heat the grill to the highest heat setting, and form the beef into plump patties about 1 inch larger in diameter than your buns. Press an indent into each patty's center.
- Right before you place them on the grill, season each side generously with salt and pepper. It's hard to over-salt these burgers!
- Place the burgers on the grill and close the lid, then let them cook for 5 minutes without touching them. Open the lid, flip, and add cheese if desired, then close the lid and cook another 4-5 minutes.
- Remove the burgers from the grill and let them rest for about 5 minutes. Then place the patties on buns with the bacon and your favorite toppings, and enjoy!

- Wagyu beef is naturally incredibly tender and flavorful, meaning that they're incredibly hard to overcook! Even a well-done burger will still be tender and juicy. If you want to monitor the temperature, use a meat thermometer.
- Always remember to salt the patties! Salt is an important aspect of the flavor, and will help form a lovely, crunchy crust on the surface of the meat.
- The most important thing about grilling burgers is not touching the burgers once they start cooking. Every time you move the burgers, they'll lose some of that incredible, flavorful juiciness. Flip them only once!
- Any topping you like is great for Wagyu burgers, but I recommend not over-loading them! The beef is so flavorful that these gourmet burgers are at their best when the natural beef flavor can shine.
