Crock Pot Meatloaf
Some meals are just made to be comforting and cozy. For me, when I dream about the perfect comfort food dinner, my thoughts drift to this classic meatloaf recipe. It’s filling, and warm, and makes for great leftovers for the next few days. What’s not to love?
With my meatloaf recipe for the crock pot, this set-and-forget meal is easier than ever before. Just form the meatloaf, stick it in a slow cooker, and go about your day! By dinner time you’ll have a tender, flavorful meal all ready to go, without ever turning on your oven.
And don’t forget the leftovers: slices of meatloaf with extra sauce make for a delicious meatloaf sandwich, and you can’t go wrong with breaking it up into crumbs to put in pasta sauce! Let’s get started making this classic comfort food dish!
Crockpot Meatloaf Recipe Ingredients
- Ground beef
- Italian breadcrumbs
- Eggs
- Diced onion
- Parsley
- A1 Sauce
- Carrots
- Red potatoes
- Beef broth
Meatloaf Seasoning Ingredients
- Basil
- Onion powder
- Garlic powder
- Paprika
- Dry mustard
- Salt
- Pepper

Meatloaf Sauce Ingredients
- Ketchup
- Brown sugar
- Worcestershire sauce
- Yellow mustard
Meatloaf Recipe for Slow Cooker
- In a large mixing bowl, add the beef, eggs, bread crumbs, onion, 1 teaspoon garlic powder, 1 tablespoon mustard powder, parsley, 1 teaspoon salt, and ½ teaspoon pepper. Mix until combined, but don’t over-mix! 35-45 seconds is enough.
- Form the mixture into a loaf shape, then place it in the slow cooker, making sure there’s plenty of space around the sides for the carrots and potatoes. Pour the beef broth around the loaf.
- Slice the carrots into large disks, then place them and the potatoes around the edges of the loaf. Mix the remaining meatloaf seasoning, along with basil and paprika, in a bowl, then sprinkle it over top the meatloaf.
- Cover, and set to LOW for 7-8 hours, or HIGH for 3-3½ hours. Once done, combine the sauce ingredients in a small bowl, brush over the meatloaf, and serve!
Crockpot Meatloaf Tips
- Make sure not to over-mix! Just mix the meat for 35-45 seconds, until the fat has begun mixing into the protein.
- If you have a few slices of bread lying around, make your own breadcrumbs using Italian seasonings and toasted bread! Homemade breadcrumbs will make your meatloaf even more moist.
- Don’t serve it right away after it’s done cooking! Let it rest for about 10 minutes to make sure it absorbs the sauce and juices.
- Not a fan of potatoes and carrots? Try swapping out the vegetables with any of your favorites, such as onions, squash, rutabaga, or turnips, according to the flavors you like.
Slow Cooker Meatloaf FAQs
You can cook raw ground meat in the slow cooker, as long as it’s thawed beforehand. If ground meat has been thawed, the slow cooker will heat it up quickly and reliably, and cook meat for long enough to reach well past the temperature threshold for safety. If your ground beef is frozen, allow it to thaw in the refrigerator overnight before using.
Meatloaf holds in moisture with a combination of cooking method and filler ingredients! Slow cookers are perfect for keeping meat moist, as the moisture is trapped in the pot. Adding breadcrumbs adds extra softness to the meat mixture so it’s extra juicy!
You can and should try making meatloaf in a crock pot! The slow cooker is great for meatloaf, as it keeps the meat extra moist and soft. It’s also perfect for a complete set-and-forget meal, as you can add in vegetables to cook alongside it for a full meal with practically no effort at all.
How to Store Meatloaf Recipes
Leftover meatloaf can be refrigerated for 3-4 days in an airtight container, or frozen for up to 3 months in a freezer-safe container or freezer bags. I like to freeze individual slices of meatloaf to take out and reheat in portions as desired.

- ½ cup Italian breadcrumbs

- ½ cup Yellow onion diced
- 1 teaspoon Garlic powder or minced garlic
- 1 Tablespoon Dry mustard
- ¼ cup Parsley chopped
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 3 Tablespoons A1 Sauce
- 2 cups Carrots
- 3 cups Red potatoes
- ¼ cup Beef broth
- 2 Tablespoons Meatloaf seasoning

- 1½ teaspoons Basil
- 1 teaspoon Onion powder
- 1 teaspoon Garlic powder
- 2 teaspoons Paprika
- 2 teaspoons Dry mustard
- 1 teaspoon Salt
- 1 teaspoon Pepper
Meatloaf Sauce
- ⅓ cup Ketchup
- 2 Tablespoons Brown sugar
- 2 teaspoons Worcestershire sauce
- 1 Tablespoon Yellow mustard
Instructions
