If you're like me and trying to cut back on carbs, you start noticing extra carbs in just about everything! Take meatloaf sauce, which is typically made with ketchup and brown sugar. By making your own ketchup-like sauce with tomato paste and vinegar, plus adding your own seasonings, you can make a way more flavorful glaze, all without the sugar.

All it takes is tomato paste, vinegar, and a blend of easy pantry staple spices to make this easy keto meatloaf glaze. Plus, because the spice blend is the same one used in meatloaf itself, it's even easier.
It's perfect for customizing!
Want a sweeter sauce? Add a little low-carb sweetener, or if you don't mind the carbs, toss in some brown sugar. Want it spicy? Try adding sriracha! Looking for a sweet-and-sour twist? Add in a dash of Hoisin sauce! You can mix and match ingredients as you'd like to fit exactly the flavor of meatloaf you're looking for.
Easy Meatloaf Glaze Ingredients
- Tomato paste: Intensely flavorful and naturally sweet, tomato paste packs this glaze with flavor without all the extra add-ins you'd find in ketchup.
- White vinegar: Vinegar brings in that tangy bite that's a must-have in a meatloaf glaze! You can also substitute apple cider vinegar or add a splash of Worcestershire sauce.
- Meatloaf seasoning: Using my homemade meatloaf seasoning makes for the perfect blend of spices without needing to touch anything pre-made. That means you get the perfect balance of flavors!
- Dried mustard: If you don't have any dried, you can use dijon mustard.
- Paprika: Sweet paprika or smoked paprika will both be great. Use smoked if you want a deeper, darker flavor.
- Salt: I prefer to use Maldon sea salt or any kosher salt.
- Pepper: Freshly cracked black pepper is a must! It adds a lot of bite and heat.
- Dried basil: You can use diced fresh basil too, but dried basil will work great and is nice and easy.
- Garlic powder: I recommend garlic powder over fresh garlic, as it has a milder flavor that won't overpower the glaze.
- Onion powder: Like the garlic powder, I recommend onion powder instead of using fresh onions.

1: Combine Ingredients
Add all ingredients to a bowl, and mix well to combine.
2: Spread on Meatloaf
Spread generously over the meatloaf, making sure to reserve half.
3: Bake and Add More
Allow your meatloaf to bake halfway, then remove from the oven and add the rest of the glaze.
4: Finish and Serve!
Finish baking, then slice, serve, and enjoy! I like making extra glaze and thinning it out with water for a meatloaf sauce!

- If you want a little more sweetness, you can add a low-carb sweetener option such as monk fruit or coconut sugar. Or, if you're not concerned about carbs, you can add regular white sugar or brown sugar.
- Feel free to customize by adding more flavors! I like adding a dash of Worcestershire sauce, my favorite BBQ sauce, and a sprinkle of fresh parsley!

I recommend making a double batch and using the extra glaze as a sauce! Just thin it out with water before pouring it over your meatloaf slices. It's also delicious on mashed potatoes, so you'll want extra!
Storing and Reheating Meatloaf Dressing
- Refrigerator: If you make the glaze early, or make extra and want to save it for later, I recommend storing the glaze in an airtight container preferably made of glass to avoid staining. Store for up to 5 days.
- Freezer: This glaze can absolutely be frozen- you can even glaze an uncooked meatloaf and freeze the entire thing!
- Reheating: This glaze is great cold, but you can also heat it in the microwave. Make sure to cover the bowl as the thick glaze can spatter easily.
