Seasoning for Meatloaf
My family loves meatloaf, so it’s a regular meal in my household. Between Italian Meatloaf, my Low Carb Meatloaf, and my Crock Pot Meatloaf, the only difficult part is choosing which one to make! All of them make great leftovers for recipes like my Meatloaf Sandwich.
The secret to cooking a perfect meatloaf is all in the seasoning and glaze. My meatloaf seasoning blend is much better than anything you can buy in a packet! It’s easy to make using common spices for meatloaf that you most likely have on hand already.
If you’re making meatloaf for dinner, definitely try my seasoning. You’ll love it!
I used this seasoning recipe for dinner. It came out so delicious and flavorful. We didn’t have mustard, or black pepper, but it still tasted great. 10/10, definitely using this next time i make meatloaf. I like this better than the seasoning packets from the store.

Meatloaf Spices
- Dried Ground Mustard: Dried ground mustard has a taste similar to a milder horseradish, and adds a fantastic level of depth to meatloaf seasoning.
- Paprika: I’m using regular paprika, but you can also use smoked, sweet, or hot paprika if that’s what you have on hand. Keep in mind it will change the flavor slightly depending on which type you use.
- Salt: I recommend using kosher salt or sea salt flakes. Table salt will not taste as good.
- Basil: You can use dried basil or fresh basil. If you use dried basil, be sure to use less than you would fresh.
- Black Pepper: Freshly cracked black pepper is best.
- Garlic Powder: For adding a garlicky flavor without the risk of burning that fresh garlic has!
- Onion Powder: Has a sweet oniony taste that fresh onions don’t offer. It’s fantastic in this meatloaf spice blend for adding so much flavor.
I tried it and it came out great. Thanks for including the adjustments for increasing the amount. I use 2 lbs ground beef and 1 lbs of ground pork so I made 5 tablespoons of seasoning. My husband loved it and felt it was perfectly seasoned and much better than the packets.

How to Store Seasoning for Meatloaf
- After mixing, add your meatloaf seasoning to an airtight container such as a spice jar. Make sure to label it.
- Store in a cool, dry place, away from heat and sunlight, such as your pantry with your other spices.
Meatloaf seasoning has a long shelf life if you’re using dried basil, but be sure to stir it when using it again to prevent any clumps.

Store in an air-tight container such as a jar (these are my favorite spice jars to use) until ready to use. For homemade spice mixes, I like to have extra on hand already mixed to use.
How to Season Meatloaf
Mix your ground beef with your dry seasoning and wet ingredients simultaneously. You want to mix everything thoroughly until it’s well-combined and the seasoning is fully integrated into the meatloaf.
