What a weekend we had! There’s nothing quite like a house full of your kids' friends; it felt like a reunion of sorts, and it brought back so many wonderful memories!
With the Eagles in the playoffs, Ron and I thought it would be fun to have Ronnie, Julia, Reis, and Jordin over to watch the game. Naturally, my mind went straight to the menu. Cheesesteak sliders and pepperoni pizza dip seemed like the obvious choices, but when I went to the store to grab shaved ribeye, both stores were completely out. What to do?!
Enter pulled pork- a game day hero in its own right! As I was getting everything ready, Ronnie called and asked if he could invite some friends over. Of course, the answer was a resounding YES! Then, I checked in with Reis, and he was just as excited to invite his friends, too. Just like that, we had a full house of friends and family, and I couldn’t have been happier.
With a growing guest list, I quickly threw another pork loin into the slow cooker, grabbed some sausage, peppers, and onions, and got to work. Ron grilled the sausage while I sautéed the peppers and onions, and before we knew it, we had an incredible buffet:
✅ Pulled pork taco bar with all the toppings
✅ Pulled pork sandwiches with soft rolls
✅ Sausage and peppers hot off the grill
It was so much fun seeing all of these young adults, many of whom made our home feel so special as they grew up. They shared stories, reminisced about their favorite meals I used to make, and couldn’t stop talking about the food (which, of course, made my heart so full). Ronnie even sent me the funniest screenshots from his friends the next day. I have to show you! It’s little moments like that that make me so happy and remind me why I love doing this so much.
And to top it all off- the Eagles WON! 🎉 So, I guess that means we’re hosting a Super Bowl party! 🏆🦅
