Happy Sunday! Ever since my kids gifted me with my new slow cooker a couple of years back, I can’t get enough of crock pot recipes. This recipe for slow cooker chicken legs is by far one of my favorites. It’s gorgeous, and the flavor is fantastic! Give it a try for dinner!
One thing you must know about me by now: I’m happiest when surrounded by my family. I love the chaos of having all of the kids, grandkids, and four dogs (yikes!) under one roof. This Easter weekend will leave me smiling for a long time. The chatter and good mood throughout the home was contagious! We were all together, and that was enough to keep this mama happy.
I always say the best part of being a grandparent is getting back those moments you forgot about when your kids were young. Easter morning was so much fun with Rory and Aiden. The egg hunt was priceless! I had forgotten how much fun egg hunts were!
We decided to have an Easter brunch, since Alex and Shay had to drive back home. It had been a while since I had put a brunch together, and it was a huge hit. The combination of flavors was magical.
My goal is to always make holidays stress-free, so I prepped everything the day before, and all of the dishes magically came out simultaneously and were perfect. That’s my secret – make your holiday meals ahead of time!
Here’s my Easter menu from this year:
- Our Charcuterie Board was perfectly put together by Shamus. It was a beautiful thing! The hit was the burrata and prosciutto, plus the roasted walnuts (which I have to share with you!).
- Grilled Ham is my absolute favorite way to cook ham. The flavors are incredible—the glaze on this ham I made the night before is so good. The green onions with the brown sugar are perfection. Ron was on grill duty and ensured this ham was grilled perfectly!
- Everyone raved about the Scalloped Potatoes. I baked them the night before and reheated them in the morning. So easy!
- Green Beans Almondine is hands-down our favorite vegetable side dish. I parboiled the green beans the night before, and Ron finished them off on the griddle. Those garlicky almonds!! Yum!!
- Our Sausage Breakfast Casserole was the star of the whole meal. You truly can not beat this delicious casserole. It’s super easy to prepare, and the crescent rolls taste so good with the eggs and sausage.
- Overnight French Toast Casserole served with warm maple syrup and a fresh Berry Fruit Salad, what could be better?
- Candied Bacon is always a hit, but this time? Every last piece was devoured!! You have to try this.
- Vo-Vo made two cakes for dessert – I’m still thinking about them!
It was a simple meal, but everyone really enjoyed it. I overheard Ronnie saying, “Each bite I take tastes better than the last!”
There is something magical about four generations of family getting together. Together is our favorite place to be!
