I am still coming down from last week's high and Reis's proposal. I am still over the moon! It was so sweet of so many of you to reach out and let me know you noticed my weight loss. You truly make my day when I hear from you! As I inch closer to November, I find myself reflecting on a journey that quietly began two years ago this month — my health journey. I never could have predicted just how much it would change me, inside and out.
When I first slipped on that 12-pound weighted vest, I had no idea it would become part of my daily routine. I never imagined that I’d be walking almost every day, or that I’d come to crave those peaceful steps as much as my morning coffee. And now, two years later, I’m walking with a 20-pound vest! Life truly is a journey — and it always begins with that very first step.

I won’t sugarcoat it — it hasn’t been easy. There have been plateaus, frustrations, and moments where I wanted to give up. But I didn’t. And when I look back, I see a woman who’s come a long way — nearly 35 pounds lighter, stronger, and more determined than ever.
The road has had its surprises. Recently, I was diagnosed with high blood pressure, and I’ll admit, that one stung. But instead of letting it defeat me, I’m choosing to see it as another reminder that our bodies are always asking us to listen, adjust, and keep growing.
Every day truly is a new opportunity — to change your habits, to try something new, to prioritize your health and your happiness, to let go of what’s weighing you down, and to believe in yourself a little more.
Each sunrise doesn’t just mark a new day — it’s an invitation.
Not for grand, sweeping change, but for small, meaningful choices.
To move your body. To eat with gratitude. To rest. To walk — even when it’s cold, even when it’s hard.
It’s never too late, and you are never too old.
The journey of transformation has no expiration date — it’s simply made up of moments where we choose to begin again.
So, here’s to taking that next step — whatever it looks like for you. ❤️

🐔 Recipe of the Week: Chicken Keto Bites

These are one of my go-to recipes for healthy eating made simple. They’re bite-sized, full of protein, and perfect for meal prep. I love making a big batch for the week — they’re delicious on their own, with a side salad, or dipped in your favorite low-carb sauce.

Creative Ways to Use Up Leftover Chicken Bites ⬇️
- Mini Chicken Parm: Arrange leftover bites in a small baking dish, top with tomato sauce + mozzarella cheese (or parmesan), then broil or bake until cheese melts and sauce bubbles. Serve with a side salad or zucchini noodles.
- Chicken “Croutons” for Salads: Cut or leave the bites whole and toss them into a green salad (such as spinach, romaine, or arugula). They give a crunchy, protein-rich “crouton” element.
- Chicken Bite “Avocado Toast”: Use the bites as the “toast”! Top with mashed avocado, a sprinkle of seasoning, and a drizzle of chili oil.
- Chicken Bite Taco Bowls: Add the bites to a bowl with cauliflower rice, avocado, salsa, cheese, and sour cream. Instant low-carb taco bowl!
