Happy Sunday friends!
Every once in a while, I come across a quote that stops me in my tracks... the kind that makes me take a deep breath and think. This week, it was this one:
“The law of invisible progress: You will see the rewards for today's efforts in a season you have not yet reached. Beneath the surface, your actions are stacking up quietly, relentlessly, invisibly. Most people quit in this phase because they mistake lack of vision for lack of progress. The ones who win are the ones who understand this law and keep showing up long enough for the invisible to become undeniable.”
This really made me think about where I am in life. So often, we move through seasons without realizing how much is unfolding beneath the surface — how much growth, gratitude, and goodness is quietly building.

I’m in that beautiful era of appreciation — of soaking up every moment surrounded by the gorgeous Georgia mountains, those crisp fall mornings, and the joy of true friendship. The kind of friendship that understands you, that sees you.
This week, a get-together at Serena’s house reminded me just how special that is — hours spent around the firepit, laughing, connecting, and sharing stories under the stars.

I’ve also found myself drawn to simple pleasures — like afternoons at Tiger Mountain Vineyards, sitting in the sunshine, sipping their delicious Petit Manseng, and chatting with Luke, their winemaker. There’s something about those moments... genuine connection, nature, good wine — that fills my soul.

And of course, I’m still finding so much joy in the kitchen. I tested a new recipe this week — my Lemon Chicken and Potatoes — and oh my goodness, it’s so darn easy but so darn delicious! I can’t wait to share it with you soon.

With Halloween just around the corner, I’m counting down the days until I get to see Rory and Aiden in their costumes. They’re at such wonderful ages, and I’m savoring every minute of their excitement and the magic of spending holidays together.
As I start planning my Thanksgiving menu, I’m filled with gratitude — for family, friendship, good food, and the reminder that progress isn’t always visible, but it’s always happening. Sometimes, we just have to keep showing up — in our kitchens, in our hearts, and in our lives — and trust that the invisible will, one day, become undeniable.

🔪 Prep Plan:
On your prep day, cook your big batch of air fryer pork chops!
Once cooked and cooled, slice or chop the pork and portion it out for Monday’s sandwiches, Tuesday’s salad, Wednesday’s fried rice, and Thursday’s tacos. Store each portion in an airtight container in the fridge.
While the pork chops are cooking, prep your shrimp!
Clean, peel, and devein the shrimp so they’re ready to cook for Friday and Saturday’s pasta. Store the shrimp in an airtight container in the fridge until ready to use.
Want to get ahead?
- Cook a pot of rice — you’ll use it for Wednesday’s fried rice and can save extra for Thursday’s tacos or Friday’s dinner.
- Wash and chop lettuce or greens for Tuesday’s salad.
- Shred cheese and prep any toppings like onions, peppers, or avocado for sandwiches, salads, and tacos.
