If there’s one thing I can never get enough of, it’s beef brisket. I love making smoked brisket, slow-cooker brisket, and even Instant Pot brisket at home, and find the best way to season it is to use a mix of simple, but flavorful common kitchen spices.
My recipe for beef brisket seasoning is perfect for an 11-pound cut of brisket. It’s a great choice for feeding a crowd, or for enjoying plenty of leftovers! Pair it with a fat or butter rub, and it’s even better.
Let me show you how to make brisket rub, when to season brisket, and even share some of my favorite brisket recipes with you. You’ll want to use this brisket seasoning for all of them!
Brisket Rub Recipe Ingredients
- Coarse Salt: You can use coarse sea salt flakes or kosher salt, but avoid table salt. Coarser salts like these offer much better flavor.
- Black Pepper: I like to use freshly cracked black pepper, but any black pepper will do.
- Smoked Paprika: I recommend you look for smoked paprika, not sweet or hot paprika. But, if you only have another variety on hand, that’s okay! You can use those instead.
- Garlic Powder: Using garlic powder in a rub enables you to get that garlicky flavor that goes with everything, without the need for fresh garlic, which would burn.
How to Make Brisket Seasoning
- Combine pepper, salt, paprika, and garlic powder in a large bowl. Whisk well to combine the seasoning completely.
- Evenly sprinkle the seasoning over the brisket and rub it in with your fingers until every part of the brisket is coated. Be generous with your rub for the best flavor.
- Store any leftover brisket rub in an airtight container such as a jar. I recommend labeling the jar so you don’t forget what’s in it!

When to Season Brisket
Season brisket generously with the dry rub immediately before cooking in it. There is no need to let the brisket marinate in the seasoning. Just make sure you evenly distribute the brisket seasoning so it covers every part of the meat completely.
For even greater flavor, try pairing beef brisket rub with a beef fat, like wagyu tallow. If you want to give that a try, apply the tallow first, then the rub.
Dry Rub Brisket FAQ
Simple seasonings are perfect for complementing beef brisket, so use a simple mixture of coarse salt, pepper, paprika, and garlic powder. By keeping it simple, you will bring out the best flavor of the beef without overwhelming it.
Add dry rub to brisket right before cooking, and it will work out perfectly. However, you can also leave it on the meat for up to 24 hours beforehand in the refrigerator. Instead of adding all of the seasoning at once, however, I recommend salting your beef brisket overnight before adding the rest of the seasoning.

What’s the difference between dry rub and wet rub?
Wet rubs use a liquid base, such as olive oil, vinegar, or beer. The beef draws in the moisture and the seasonings. Dry rubs, on the other hand, only use dry seasonings and no liquid. Dry rubs create a flavorful crust on the beef without adding any extra moisture.

How to Store Beef Brisket Seasoning
Store homemade brisket seasoning in an airtight container, such as a spice jar. Brisket rub has an indefinite shelf life, but is best used within 6 months of mixing it. Give it a good mix whenever you use it again.

- ¼ cup sea salt
- ¼ cup paprika
- 2 Tablespoons garlic powder
Instructions

- Mix the seasoning using a whisk or fork until fully combined. Evenly distribute it on your beef brisket, using your hands to rub the seasoning into the meat. Cook as directed following my smoked brisket recipe if desired.
Notes
- This rub is enough to season an 11-pound brisket. Adjust the measurements as necessary for your brisket. What’s important is that you give it a generous coating of seasoning all over the meat.
- Brisket seasoning will last indefinitely when stored in an airtight container in a cool, dry location such as your pantry with your other spices. Give it a mix before using it again.
