After growing up eating tons of heavily seasoned, juicy chicken, it was bewildering to me to learn that a lot of people consider chicken to be a bland, flavorless meat. Then I tried unseasoned chicken… suddenly, the obsession with Rotisserie chicken seasoning made sense!
That’s why I’m sharing my essential chicken seasoning blend. Just like the seasonings you’ll find on a classic Rotisserie chicken, this spice mix combines herbal, earthy, spicy, and savory flavors into a mixture you’ll find yourself putting on every cut of chicken out there – and more!

Chicken Seasoning Powder Ingredients
- Kosher salt: Use a nice, flaky salt like sea salt or kosher salt. The larger grains cling to the meat better than table salt.
- Black pepper: Freshly cracked black pepper will have the best flavor! However, you can use ground pepper too if it’s what you’ve got.
- Dried basil: Dried herbs make this chicken seasoning blend easy to store. I like a little basil to add freshness.
- Dried rosemary: If you’d like, you can chop up the dried rosemary into tiny pieces to avoid any hard herb bits in your food.
- Dried thyme: Thyme has a lovely herbal flavor that complements chicken well without overpowering it!
- Garlic powder: The mellow sweetness of garlic powder adds a steady undercurrent of flavor; I prefer it in seasonings to fresh garlic, which is too sharp.
- Mustard powder: A secret ingredient you don’t want to skip out on! A little mustard powder adds a ton of depth of flavor, plus it gives the chicken a wonderful golden color.
- Paprika: If you can find it, smoked paprika is even better!
- Celery salt: Celery salt is one of those ingredients I really can’t go without; it adds a unique flavor that other seasonings miss out on. I highly recommend stocking your cupboard with it!
- Ground cumin: Just a touch of ground cumin is all it takes; it adds a wonderful earthiness to balance out the brighter herbal flavors.
- Cayenne pepper: You can leave this out if you want, but I love adding just a tiny bit of kick with cayenne! It livens up the whole seasoning!
How to Make Chicken Roast Seasoning
1: Combine
Place all ingredients and spices in a small bowl, and mix well.
2: Season
Sprinkle over chicken, or add flour and toss the chicken in it before cooking for a crisp coating. Enjoy!

- You can use fresh herbs! It won’t be shelf stable, but fresh herbs will taste truly incredible. If you’re using fresh, double the amount of each herb.
- You can easily adjust this seasoning blend to best fit what you’re cooking. Add chili powder and oregano for a Mexican twist, or Italian seasoning for chicken with pasta!
- This recipe makes 2 tablespoons, which is enough to season one whole chicken or roughly 3 pounds of chicken.
- You can turn this seasoning into a delicious butter rub by mixing it into softened butter, or use it as a marinade by adding in olive oil!
Storing Homemade Chicken Seasoning
Thanks to this seasoning including only dried, shelf-stable ingredients, it can easily be stored in the pantry in an airtight container or small jar pretty much indefinitely!
If you choose to include fresh herbs, store leftovers in the freezer in an airtight container to preserve the herbs.

You can absolutely make this seasoning into a fine, even powder if you prefer. I like to do so when I’m using dried herbs, as it helps evenly coat the chicken with flavor without any large dried stem pieces. To do so, blend the seasoning in a coffee grinder until powder-smooth!
I prefer to use this chicken seasoning any time I’m cooking chicken that won’t be slathered in sauce. It’s my favorite for whole roast chicken, as well as pan fried chicken breasts or skin-on chicken thighs! It’s also great added into shredded chicken to give it a rotisserie sort of flavor.

- 1 teaspoon black pepper
