When you think "chicken bites", you might think of chicken nuggets or chicken breast pieces similar to my (amazing) steak bites recipe. But no, these homemade chicken bites are totally unique and truly something special!
You make my chicken bites using ground chicken, making this recipe a blend of my favorite qualities a recipe can have: budget-friendly, keto, and downright delicious. They're crispy, juicy, and packed with flavor - not to mention, versatile!
I first started making this chicken bites recipe when I really wanted avocado toast without the bread. It was something I enjoyed every morning, but to keep up with my lower carb lifestyle, I had to find an alternative. These chicken bites are just that, but they're also so much more. I've come to rely on them for quick, easy, and delicious family dinners like low carb chicken parm or chicken cordon bleu in bite-size form, and honestly often snack on them just because they're so irresistibly tasty.

Ingredients in Chicken Bites
- Ground Chicken: The base of these chicken bites is ground chicken, not whole chicken meat. It's honestly much easier to work with and the results are fantastic. The texture is consistently on point, too!
- Cottage Cheese: I love cottage cheese as a low carb staple. In these chicken bites, it adds soft, rich flavor.
- Shredded Cheese: You can use cheddar or mozzarella or really any shredded cheese you have on hand and enjoy with chicken.
- Parmesan Cheese: Grated parm serves as the binding agent for these chicken bites, along with the egg, because we aren't using any breadcrumbs.
- Egg: As always, I recommend farm fresh eggs if you have access to them. It makes such a difference to use farm fresh eggs!
- Garlic Powder: A little bit of garlic adds the perfect touch of flavor to these chicken bites. There's no need to use fresh garlic in this recipe.
- Salt: For best results, use kosher salt or sea salt flakes.
- Black Pepper: Freshly cracked black pepper is best if you have it.
How to Make Chicken Bites
- Set out 1 large bowl and 1 baking sheet lined with parchment paper. Preheat your oven to 400°F.
- Add cottage cheese, shredded cheese, grated Parmesan cheese, ground chicken, egg, garlic powder, salt, and black pepper to the bowl.
- Mix the bowl of ingredients together well using your hands.
- Drop the meat mixture by the spoonful onto the parchment-lined baking sheet. If you want the chicken bites to be flat, spray the bottom of a cup with non-stick cooking spray and lightly press down on the spoonfuls of meat.
- Bake at 400°F for 25-30 minutes.
Alternate Cooking Methods
Homemade chicken bites can be made in the air fryer instead of a traditional oven, if you prefer. If air frying, do not use parchment paper. Air fry at 400°F in a preheated air fryer for 20-30 minutes.
Tips for Making Chicken Bites
- Whatever shredded cheese you want to use or have on hand will work well for this recipe.
- Don't overdo the salt! The cheeses already include salt, so be careful with added salt.
- If you want a little spice, use red pepper flakes instead of black pepper. I love that spice kick for my avocado "toast."

Storing Chicken Bites
Store in the refrigerator for 3-4 days in an airtight container or in the freezer for 3-4 months in a freezer-safe container.
Reheating Chicken Bites
Reheat at 400°F in the oven or air fryer approximately 5 minutes or until heated through.
To reheat from frozen, defrost overnight in the refrigerator before reheating for best results.
FAQ
If you don't have parchment paper, you can grease the baking pan instead - just make sure it's really well-greased, or the cheese will stick!
Customize the size to your liking. I measure them to fit the palm of my hand, but you can make them bigger or smaller as you like. Smaller chicken bites will crisp up faster, so keep an eye on them. They make great croutons for salads!
