My Coffee Rub for Steak is the ultimate seasoning for steak or prime rib! It’s savory and earthy, and comes together in minutes using a simple blend of pantry spices, spicy brown mustard, and ground coffee. You can also use it as a wet rub for chicken or pork chops!

Steak Rub with Coffee
One of the easiest ways to transform a recipe is to try it with a new seasoning. That’s how I discovered how fantastic this coffee rub recipe is for beef—by giving it a try for the first time with grilled prime rib!
This steak rub with coffee is intensely flavorful, with an earthy taste that pairs well with both slow cooking methods like braising, roasting, or smoking, and quick cooking methods like pan-searing, grilling, or even air-frying.
You can use it for more than just beef, too. I’ve tried my coffee rub recipe with pork chops on the grill, chicken breasts in a skillet, roast chicken in the oven… It’s versatile, and so tasty!
Coffee Rub Recipe Ingredients
- Brown Spicy Mustard: Aside from the coffee, the key ingredient to this wet rub for beef is brown spicy mustard. If you want to make it a dry rub, you can substitute by adding 3 teaspoons of dried mustard to the mix.
- Ground Coffee: You can use any ground coffee of your choosing.
- Paprika: I’m using regular paprika. Keep in mind if you use hot, sweet, or smoked paprika, the flavor will be altered slightly.
- Granulated Garlic: For garlicky flavor without the need for fresh garlic.
- Minced Onion: Adds a sweet, oniony flavor to the seasoning mix that only dried onion can provide.
- Brown Sugar: For sweetness and caramelization!
- Salt and Black Pepper: I recommend using kosher salt or sea salt flakes, and freshly cracked black pepper, for best flavor. Avoid using table salt.
How to Make Coffee Rub
- Add ground coffee, paprika, granulated garlic, minced onion, brown sugar, black pepper, and salt to a bowl. Mix well until fully combined.
- Rub brown spicy mustard on the meat, then apply the coffee rub and pat it down for best results. If you prefer, the spicy mustard can be left out so only the coffee rub itself is used.

Ingredients
- 3 Tablespoon Brown Spicy Mustard
- 2 Tablespoons Ground Coffee
- 2 Tablespoons Paprika
- 2 Tablespoons Granulated Garlic
- 2 Tablespoons Minced Onion
- 1 Tablespoon Brown Sugar
- 1 Tablespoon Black Pepper
- 1 Tablespoon Salt
Instructions
- Add 3 Tablespoon Brown Spicy Mustard, 2 Tablespoons Ground Coffee, 2 Tablespoons Paprika, 2 Tablespoons Granulated Garlic, 2 Tablespoons Minced Onion, 1 Tablespoon Brown Sugar, 1 Tablespoon Black Pepper, and 1 Tablespoon Salt to a bowl.
- Mix together. Use immediately or store in the refrigerator (unless excluding the spicy brown mustard).
Notes
- The two key ingredients to making coffee rub are the ground coffee and the brown spicy mustard. The brown spicy mustard is applied first, before the coffee rub, by rubbing it on the meat. If you prefer, it can be left out entirely and only the coffee dry rub may be used.
- Store leftover coffee rub, without the mustard, in a tightly sealed jar for up to a month.
