- Pork Chops: For grilling pork chops, thick, bone-in pork chops work best. Thicker pork chops with a bone are less likely to dry out on the grill. If you want to use thinner pork chops or boneless pork chops, you can, but keep in mind they will dry out more easily and cook more quickly.
- Olive Oil: Extra virgin olive oil, light olive oil, or avocado oil will all work for grilling pork chops.
- Salt and Pepper: For best flavor, use sea salt flakes or kosher salt and freshly cracked black pepper.
- Paprika: A little bit of regular paprika adds so much depth of flavor to pork. Be sure to use regular paprika for the proper flavor.

Grilled Pork Chop Recipe Instructions
I have used both a gas grill and a charcoal grill to grill pork chops; both will work. You could even grill them indoors using a grill pan. No matter how you grill pork chops, make sure to follow my pork temperature chart and have an instant read meat thermometer on hand.
Step 1: Preheat your grill to high heat. Lather pork chops on all sides with olive oil.
Step 2: Season pork chops liberally with salt, pepper, and paprika. Give them a good coating. You can also use your favorite pork chop seasoning.
Step 3: Place your pork chops on the grill and sear them on each side for 5 minutes per side. Then, reduce the heat on your grill to medium-high. Move your pork chops to indirect heat (on the upper rack; or, if you do not have one, then move the heat to one side of the grill and place the pork chops on the opposite side).
Step 4: Close the lid and allow them to cook until they reach an internal temperature of 145°F as read by an instant read meat thermometer inserted into the thickest part of the pork chops (about 15-20 minutes). Be careful not to touch the bone when reading the internal temp. Once the pork chops hit an internal temperature of 145°F they are finished. Let rest for 5 minutes, and enjoy!

- One way to really enhance the flavor of your pork loin chops is to dry brine them. You can achieve this by salting them thoroughly, placing them on a wire rack uncovered, and leaving them in the fridge for 4-12 hours. Skip the salt right before grilling, if you choose to do it this way.
- This recipe works for pork chops of all sizes. Just make sure not to overcook them or they will dry out. A 145-degree internal temperature is a sweet spot for juicy, medium-rare pork chops. This means the internal temperature is more important than worrying about how long they’ve been cooking.
- High heat for a gas grill means you should have those knobs turned up as high as they will go. For a charcoal grill, try to reach about 500 degrees, minimum.
- You can sprinkle some lime juice or lemon juice over the loin chops for additional flavor.
How Long to Grill Pork Chops
Cooking 1-inch to 1.5-inch center-cut rib chop to a juicy medium-rare should take about 15-20 minutes on the grill; however, for cooking pork chops of all sizes, what's most important is to measure the temperature using a meat thermometer to check their doneness.

Pork chops can be seasoned right before cooking, or you can use a dry brine to enhance the flavor. To dry brine the pork chops, salt them thoroughly, then place them on a wire rack (uncovered) and leave them in the fridge for 4-12 hours. When seasoning after dry brining, do not add more salt.
So long as you do not overcook the pork chops, they will not dry out when grilling by following this recipe. At around the 15 minute mark, check your pork chops with a meat thermometer. If they are at the 145 mark for internal temperature, they are ready to take off the grill.
Fresh, uncooked pork chops last in the refrigerator for 3-5 days. If you want to season them beforehand, I recommend seasoning them for 4-12 hours before cooking them, using only salt, and no more than that. This is called a dry brine. Add the remaining seasoning when ready to cook.
