Baileys Fudge Recipe
Homemade fudge is such a great addition to any holiday party, and this Baileys fudge is always a hit. It’s a great Christmas party or New Year’s Eve menu idea because it tastes delicious and has little extra special “something, something” thanks to the Baileys! Plus, because it’s such an easy fudge recipe, it’s simple to make ahead of time, too.
Easy Fudge Recipe Ingredients
- semi-sweet chocolate chips
- sweetened condensed milk
- corn syrup
- Baileys
This easy fudge recipe has a creamy chocolate flavor and a perfectly smooth consistency. The Baileys cuts the sweetness and make it the perfect grown-up dessert.
How to Make Fudge
- Line an 8×8 inch square pan with parchment paper or line with aluminum foil and grease lightly.
- Using a double boiler, add 1 inch of hot water to the larger pot.
- If you don’t have a double boiler, see the notes below on how to make a double boiler.
- Heat the double boiler over low heat.
- Add the chocolate and sweetened condensed milk to the upper pot of your double boiler or the glass bowl.
- Gently stir as everything melts together.
- Once fully melted, remove the upper pot/glass bowl from the burner and stir in the corn syrup.
- Then vigorously stir in the Baileys.
- Pour the mixture into the parchment-lined pan and allow it to chill in the fridge for 4 hours.
- Cut into squares and serve.
This easy chocolate fudge recipe is so easy to make, you don’t even need a candy thermometer. It only takes about 10 minutes, and since it only uses four ingredients, it really is as simple as it gets!
How to Make a Double Boiler
If you are like us, we don’t like to have extra kitchen equipment stored for limited use. Plus, making your own double boiler is super easy! All you need is a large saucepan or pot and a heatproof glass or metal bowl.
- Pour about an inch of water into the pot.
- Place the bowl with the chocolate on top of the saucepan.
- Bring the water to a boil.
- Melt the chocolate while the water simmering and whisking vigorously.
That’s it! You now have your own double boiler. The alternative is to use your microwave (see below).
Why use a double boiler? I recommend using a double boiler for making fudge because it melts the chocolate more evenly. You’ll melt together chocolate chips and a can of sweetened condensed milk over low heat. Gently stir to ensure everything melts together smoothly.
Easy Microwave Fudge
You can make this easy homemade fudge in the microwave!
All you have to do is follow the instructions above, but instead of melting the chocolate in a pot on the stove, place it in a big glass bowl.
- Microwave the chocolate in 30-second increments, stirring each time.
- Recipe Tip: Make sure you do not melt the chocolate for longer than 30 seconds at a time. Once the chocolate “bakes” you will have to start all over.
- As soon as all the chocolate is melted and the mixture looks glossy and thick, transfer it to the pan and let it set up.

Bailey’s Fudge Recipe Tips
- Melting the fudge: We recommend using a double boiler for making fudge because it melts the chocolate more evenly. You’ll melt together chocolate chips and a can of sweetened condensed milk over low heat. Gently stir to ensure everything melts together smoothly.
- Chocolate for fudge: We recommend using semi-sweet chocolate chips for this recipe because the flavor is a little richer, but you can also use milk chocolate for a creamier fudge or even 50% dark chocolate for an even richer fudge.
- Microwave fudge: Make sure you do not melt the chocolate for longer than 30 seconds at a time. Once the chocolate “bakes” you will have to start all over.
- How to make fudge harden: For firmer fudge, store in the fridge.

How to Store Fudge
Fudge can be kept in an airtight container in the refrigerator or at room temperature.
At room temperature, easy homemade fudge will stay fresh for at least 2 weeks.
In the fridge, it will stay fresh for at least a month.
Can you freeze fudge?
Yes, you can freeze fudge. Just wrap it really tightly with saran wrap so it doesn’t absorb any freezer odors.
Chocolate fudge will last in the freezer for at least 3 months.

Baileys Fudge
Ingredients
- 18 oz semi-sweet chocolate chips
- 14 oz sweetened condensed milk
- 1 tablespoon corn syrup
- ¼ cup Baileys
Instructions
- Line an 8×8 inch square pan with parchment paper or line with aluminium foil and grease lightly.
- Using a double boiler, add 1 inch of hot water to the lower pot. If you don’t have a double boiler, in a medium saucepan add 1 inch of hot water. Place a large glass bowl over top, ensuring that the bottom of the bowl doesn’t touch the hot water.
- Heat the double boiler over low heat.
- Add the chocolate and sweetened condensed milk to the upper pot of your double boiler or the glass bowl. Gently stir as everything melts together.
- Once fully melted, remove the the upper pot/glass bowl from the burner and stir in the corn syrup. Then vigorously stir in the Baileys.
- Pour the mixture into the prepared pan and allow to chill in the fridge for 4 hours.
- Cut into squares and serve.

Hi Carolyn, Bailey’s is an Irish whiskey and cream-based liqueur so you will find that in stores that sell alcohol. I hope that helps!
