Pasta with Avocado Sauce Ingredients
- Pasta
- Ripe Avocados
- Fresh spinach
- Garlic
- Olive oil
- Lime
- Parmesan Cheese
- Salt and pepper
- Cherry tomatoes (optional)
Avocado Pasta Recipe Instructions
- Boil your favorite pasta according to package instructions. Before draining the pasta, reserve a ½ cup of the pasta water. Add a little oil to the drained pasta so it doesn’t stick.
- Slice the avocado in half, then remove the pit and peel. Add the avocado to a food processor, along with olive oil, spinach, garlic, lime juice, salt, pepper, and half the Parmesan. Blend until smooth; you may need to add reserved pasta water until it’s the desired consistency.
- In a large pan, combine the pasta sauce and cooked pasta over low heat, tossing until everything is evenly coated and warmed through. Add the extra Parmesan and optional tomatoes.
- Serve in a large bowl immediately with extra parmesan cheese and a drizzle of olive oil and salt, and enjoy!
Creamy Avocado Pasta Sauce Tips
- I highly recommend fresh limes for the juice in this recipe. Bottled will work, but it will have a much duller flavor than you get from fresh juice.
- Don’t swap the oil out for a different kind! A good quality olive oil is required to ensure the best flavor, as it does a lot of the heavy lifting in this simple recipe.
- Ripe, fresh avocados are a must! Firm, green avocados will be too hard to blend properly, and their mild flavor won’t do as well in sauce. Check out my tips for how to ripen avocados below!
- The pasta will continue cooking when it’s added to the sauce, so make sure to not overcook the pasta. Al dente is perfect!
- Cherry tomatoes are just one option for added toppings. This delicious pasta is also great with chicken, shrimp, and all sorts of added veggies!
- Try other varieties of pasta, like spaghetti. Avocado spaghetti is delicious!
- If you want a gluten-free dish, just use gluten-free pasta, zoodles or chickpea pasta.
How to Ripen Avocados Quickly
If you have avocados that aren’t ripening fast enough, there’s an easy trick to get them to soften more quickly! All it takes is a paper bag and a ripe banana.
All you need to do is add the avocados and the banana to the bag, then fold it closed and place it on the counter for 1-2 days. Open it up, and you’ll find that the oxidation of the banana will have ripened the avocados extra quickly!
Avocado Sauce Pasta FAQ
Because avocado oxidizes and turns brown when exposed to air, it’s important to store leftovers correctly. The best way to do this is to store leftovers right away in an airtight container and place plastic wrap tightly over the top to prevent air from reaching the pasta.
All food made with avocado will brown when exposed to air for long enough, but if stored properly, you can lessen the effect. It’s important that avocado-based meals are eaten right away and any leftovers are stored quickly in an airtight container. Luckily, it’s so delicious, you may not have any leftovers at all!
Avocado is naturally creamy and mild, making it ideal for pairing with other flavors. Tart, acidic flavors cut through the fat of the fruit very well, so lime and lemon are classic choices. Salty options like hard cheeses are also good options, as well as salt and seasonings!
Avocado Pasta Recipe Ideas
- Pesto Avocado Sauce: Turn this creamy, tangy sauce into a zesty pesto by swapping the spinach for basil, and adding ½ cup of walnuts to the blender!
- Avocado Pasta with Shrimp: Add in cooked cocktail shrimp or freshly defrosted salad shrimp for a perfect dose of protein that will pair beautifully with lime! I love pairing mine with crispy Air Fryer Shrimp.
- Chicken Avocado Pasta: Sliced grilled chicken and toss it in the pan with the sauce! Chicken has a perfect salty chew that’s perfect with creamy, tangy avocado sauce.
