Chocolate Strawberries
One of my favorite gifts to receive for Valentine’s Day and Mother’s Day has always been chocolate-dipped strawberries. There is something so irresistible about the combination of sweet, tangy strawberries with rich, creamy chocolate.
The best chocolate-covered strawberries I have ever had were chocolate ganache strawberries. Let me tell you, you just cannot beat the flavor of chocolate ganache for dipping – there is nothing like it! It’s creamy, rich, and best of all, just as easy to make as any other chocolate dip.
Chocolate Covered Strawberries Ingredients
- heavy whipping cream
- semi-sweet chocolate chips
- sea salt, or kosher salt
Any time I melt chocolate, I always use these microwave-safe bowls. They make it so easy!
How to Make Ganache
- Pour semi-sweet chocolate chips into a heat-proof bowl.
- Heat heavy whipping cream in the microwave for about 45 seconds, until it just begins to bubble. Carefully pour the hot whipping cream over the chocolate chips in the bowl.
- Stir until the chocolate melts and is smooth. If the chips don’t melt completely, put the bowl back in the microwave for about 10 to 15 seconds to heat just slightly. Stir until smooth.
- Add a pinch of sea salt or kosher salt, and stir to combine.
How to Make Chocolate-Covered Strawberries
- Line a baking sheet with parchment paper before mixing your ganache.
- Set out strawberries to have them ready to dip.
- Prepare your chocolate ganache as instructed.
- Tilt the container of melted chocolate to the side and dip the berry at the side of the bowl, swirling it around to coat it as close to the top and as evenly as possible without covering the green leaves.
- Repeat until all berries are dipped in chocolate. Add desired toppings quickly, before the chocolate hardens.
Chocolate Ganache Recipe Tips
- For a larger serving, use 1 cup of heavy whipping cream and 8 oz. of chocolate. This will yield about 2 cups.
- To make the non-dairy chocolate ganache, use canned coconut milk instead of heavy cream.
- My recipe for chocolate ganache will make about 1 cup of glaze, which works perfectly for 1 pound of strawberries.
- If you’re glazing a cake, add a tiny amount of corn syrup to the ganache to give it a beautiful shine. This is the secret grocery store bakeries use to make their cakes look shiny. Use about 3 Tablespoons.
How to Make White Chocolate Ganache
To make the white chocolate ganache, simply follow the above instructions and replace semi-sweet chocolate chips with white chocolate chips. I use Ghiradelli or Guittard brands – both melt very well.
What is Ganache?
Ganache glaze is a mixture of cream and chocolate that can be used as a frosting, icing, glaze, or chocolate filling. You make the chocolate ganache by heating heavy cream, then pouring it over the chocolate.

How to Make Chocolate Footballs
- Make both chocolate and white chocolate ganache.
- Dip the strawberries in the chocolate ganache.
- Use a toothpick to dip the white chocolate and draw lines on the chocolate-dipped strawberry!

How to Make Easter Berries
- Follow the instructions to make the white chocolate ganache, then add orange food coloring and stir to combine until it is the color you want.
- Dip strawberries with the leaves still intact, up the body of the berry without covering the leaves.
- Place dipped strawberries on wax paper and allow to set.
- In the meantime, pour remaining orange chocolate in a piping bag or zip-lock bag. Cut a small tip off the edge of the bag.
- Drizzle over the berries to create decorative lines.
Bunny Chocolate Dipped Strawberries
- Melt white chocolate without adding any food coloring. Dip berries in the chocolate to cover them completely and allow to set.
- Pipe a small mound of chocolate near the top of the berry and shake on sprinkles. To make them look like bunny tails, I made the piped chocolate slightly teardrop-shaped.
Easter Egg Strawberries
- Trim the leaves off of your strawberries. Melt white chocolate and dip berries to cover completely, then allow them to set.
- Stir in desired food coloring color and pour into a piping bag or zip-lock bag. Cut a small tip off the edge of the bag. Drizzle over top the berries and immediately add sprinkles.

How to Store Chocolate-Covered Strawberries
You can store your chocolate-dipped strawberries in the fridge for up to two days. Here are some tips on storing them properly:
- Avoid refrigerating them for as long as possible. Once you add them to the fridge, chocolate strawberries usually gather condensation and “sweat”!
- For the first day, you can keep them on parchment paper on a baking sheet to enjoy.
- Cover them in wax or parchment paper, then place them in an air-tight container lined with a paper towel.
- If you put a little bit of baking soda on the paper towel, it will absorb moisture. Make sure to put another paper towel over the top if you do this so you don’t get any of the baking soda on your strawberries!
Strawberries with Chocolate FAQs
Ganache is a heavier cream than frosting and is not whipped. You can pour ganache to be thick or thin, instead of spreading it like a frosting, making it a great choice for pouring a chocolate shell over a cake.
For a thicker ganache, use a higher chocolate-to-cream ratio. Dark chocolate melts to a thicker consistency than other chocolates, and may also be used. For a thicker ganache, use a 2 to 1-ratio of chocolate to cream, and for a thinner ganache, use a 1 to 1 ratio.
Ganache will harden at room temperature if set out for several hours. It is best to keep ganache refrigerated, as it contains dairy.

Notes
- Make a white chocolate ganache recipe by using white chocolate chips instead. Dark chocolate ganache is delicious, too.
- If the chocolate is too thin, put it in the freezer for a couple of minutes until it thickens.
- Use as a topping for fruits, cakes, cheesecakes, etc.
- This recipe is for a little under 1 cup. To make a larger portion, use 1 cup heavy cream and 8 oz. chocolate. This will make about 2 cups.

i used 8 ounces of semi sweet choc and 3 ounces of heavy cream. refrigerated overnight. when i brought to room temp the choc was very soft and unable to pick up berries. your recipe would seem that the ratios would be way to much cream. any suggestions?

I’ve honestly never had any issues with this ratio so I’m not certain what could’ve gone wrong, but if you find there’s too much cream, you could pour it in gradually as you mix and stop when it’s reached the consistency you’re looking for!
