Chocolate salami is a traditional Portuguese holiday recipe, and I grew up always having it. I looked forward to it every year, and of course now make it for my family as often as possible!
There is something so special about homemade Salame de Chocolate. It uses such simple ingredients and is so easy to make, but everyone you serve it to will think it is an elegant masterpiece that must have taken hours!
The truth is, it takes just 15 minutes to make. Mix your ingredients in a bowl, roll it all into a log, and place it in the freezer. Once it sets, you have a perfect holiday treat to serve and enjoy, or give as a gift.

Chocolate salami is a combination of cocoa, biscuits, butter and, occasionally, nuts and candied fruit. My chocolate salami recipe uses dark chocolate, biscuits, soy milk, vegetable oil, coffee powder, and salt. If you use vegan biscuits, this is a dairy-free and vegan chocolate salami recipe.
Chocolate salami is originally both an Italian and Portuguese dessert, known as salame al cioccolato and salame de chocolate respectively. You can find variations on chocolate salami in various places throughout the world, such as shokoladnaya kolbasa in Russia, and salam de biscuiți in Romania, for example.
You can use your favorite type of sweet cookie biscuit to make chocolate salami. The traditional choice for Portuguese Salame de Chocolate is bolacha maria, or maria biscuits. Bolacha maria are my favorite to use.
Freezing chocolate salami is a necessary part of making the recipe, and it can be kept frozen for up to a month. If you plan on freezing it beyond the time required by the recipe, wrap it tightly in foil and label with the freezing date.
Chocolate salami lasts for 5-6 days stored in an airtight container in the refrigerator. It must be kept refrigerated when it is not being served.
How to Make Chocolate Salami
- Break the biscuits into large crumbs with your hands into a bowl. Or, set them on a dry cloth, close the cloth around them, and crush them by applying pressure with your hands. I do not recommend using a food processor or blender, as you want large crumbs, not powder.
- Once the biscuits are prepared, set them aside. In the meantime, melt dark chocolate over low heat using a double boiler, or melt in the microwave in 30-second increments at low power, stirring each time. You can also make your own double boiler to melt the chocolate (see How to Make a Double Boiler below).
- When your chocolate melts completely, remove it from the heat and add soy milk, vegetable oil, coffee powder, and salt (optional). Mix until smooth.
- Add the crushed biscuits and mix thoroughly until combined. Once mixed, quickly pour everything onto a sheet of baking paper.
- Roll the chocolate salami into a log. Twist the ends closed, then add it to the freezer. Let it set in the freezer for 3 hours.
- Once the salami has hardened in the freezer, remove the baking paper. You can roll it in icing sugar if you like. Serve in slices, and enjoy!
How to Make a Double Boiler
To make your own double boiler, all you need is a large saucepan or pot, and a heatproof glass or metal bowl larger than the pot.
- Fill the saucepan halfway with water.
- Bring to a low simmer.
- Add chocolate to the heatproof bowl.
- Set the heatproof bowl over top the pot. The bowl should not touch the water, but should rest just above it. Because of this, you will need a larger bowl than pot.
- The contents of the bowl should begin to melt. Make sure to stir frequently while the chocolate melts so it does not seize up. Do not leave it unattended.
How to Melt Chocolate in the Microwave
If you would rather melt your chocolate in the microwave, you can by following these steps:
- Add your chocolate to a microwave-safe container.
- Place the container in the microwave and set the microwave to low power.
- Microwave in 30 second intervals, stirring in between each interval, until completely melted and smooth.
Recipe Tips
- If you want to make your Salame de Chocolate even richer and tastier, you can add chopped hazelnuts and candied fruit. To do this, take out ½ cup of biscuits and replace it with the nuts you like or with candied fruit of your choice.
- Roll the chocolate salami in icing sugar for a gorgeous finishing touch.
- Make this a vegan chocolate salami by using vegan biscuits. The other ingredients are already dairy-free and vegan.

Chocolate Salami (Salame de Chocolate)
Equipment
- Double boiler or saucepan or pot
- Parchment paper
- Two mixing bowls
Ingredients
- 2 cups Dark Chocolate grated
- 1½ cups Cookie biscuits crushed; I use Maria biscuits
- ¼ cup Soy milk or any vegetable milk of your choosing
- 2¾ Tablespoons vegetable oil (or exactly 40 ml.)
- 1 teaspoon Coffee Powder
- 1 pinch of salt optional
