Famous Chocolate Ganache
If you live on the American east coast and are familiar with Publix stores, then you’ve probably tried their famous chocolate ganache cake at least once in your life. Living in Florida, I have had this cake many times and can tell you, it is amazing.
What makes the cake so incredible is its chocolate ganache frosting. The ganache is poured over the cake like a chocolate shell, and has the most incredibly deep flavor. My family loves it so much more than regular chocolate topping, I just had to learn how to make chocolate ganache myself.
This ganache glaze is incredible. I promise you, if you try it, you will never turn back to regular chocolate glaze for dipping strawberries, topping ice cream, or using as a chocolate shell for cake. Give it a try and be amazed!

Ganache glaze is a mixture of cream and chocolate that can be used as a frosting, icing, glaze, or chocolate filling. You make chocolate ganache by heating heavy cream, then pouring it over chocolate. It’s French in origin, also called crème ganache, and originally was best known as a type of chocolate truffle rather than a chocolate cream glaze.
Ganache is a heavier cream than frosting and is not whipped. You can pour ganache to be thick or thin, instead of spreading it like a frosting, making it a great choice for pouring a chocolate shell over a cake.
Chocolate ganache must be refrigerated, and will keep well for 5 days to 1 week kept in an airtight container.
To freeze chocolate ganache, store in an airtight freezer-safe container with an inch and a half of space at the top to account for expansion. Allow it to cool, then place in the freezer and freeze for up to 1 month. When ready to use, thaw in the refrigerator, then bring to room temperature and heat as necessary.
Allow both your ganache and the cake to cool slightly before pouring it over the cake. If your ganache is too warm, it will be too thin and will melt. The same goes for dipping ganache covered strawberries. Allow the ganache to cool slightly for a thicker consistency when dipping.
For a thicker ganache, use a higher chocolate-to-cream ratio. Dark chocolate melts to a thicker consistency than other chocolates, and may also be used. For a thicker ganache, use a 2 to 1 ratio of chocolate to cream, and for a thinner ganache, use a 1 to 1 ratio.
Let ganache set for 2 to 4 hours on a cake to give it time to harden. The best way to harden ganache is to place your cake in a freezer.
Ganache will harden at room temperature if set out for several hours. It is best to keep ganache refrigerated, as it contains dairy.

My recipe for chocolate ganache will make about 1 cup of glaze, which works perfectly for 1 pound of strawberries. Or, use it as chocolate ganache for cheesecake by pouring it over our Instant Pot Cheesecake or Strawberry Swirl Cheesecake for a strawberry ganache cheesecake.
For a larger serving, use 1 cup of heavy whipping cream and 8 oz. of chocolate. This will yield about 2 cups.
Non-Dairy Instructions
To make non-dairy chocolate ganache, use canned coconut milk instead of heavy cream.
How to Make Ganache
- Heat heavy whipping cream in the microwave for about 45 seconds, until it just begins to bubble.
- Pour semi-sweet chocolate chips into a heat-proof bowl.
- Carefully pour the hot whipping cream over the chocolate chips in the bowl.
- Stir until the chocolate melts and is smooth. If the chips don’t melt completely, put the bowl back in the microwave for about 10 to 15 seconds to heat just slightly. Stir until smooth.
- Add a pinch of sea salt or kosher salt, and stir to combine.
How to Make White Chocolate Ganache
You can make this recipe with white chocolate instead of milk chocolate by using white chocolate chips!
Simply follow the above instructions and replace semi-sweet chocolate chips with white chocolate chips. I use Ghiradelli or Guittard brand, as both melt very well.

How to Make Chocolate Covered Strawberries
- Line a baking sheet with parchment paper before mixing your ganache.
- Set out strawberries to have them ready to dip.
- Prepare your chocolate ganache as instructed.
- Once prepared, dip your strawberries in the ganache one by one. Dip them up to, but without covering, the green leaves. Tilt the container of melted chocolate to the side and dip the berry at the side of the bowl, swirling it around to coat it as close to the top and as evenly as possible.
- Repeat until all berries are dipped in chocolate. Add toppings as desired and quickly, before the chocolate hardens.
Chocolate Covered Strawberry Toppings
- Chopped nuts: peanuts, pecans, almonds, pistachios, etc.
- Sprinkles: even better if you use seasonal sprinkles!
- Cookie crumbs: Oreos are especially yummy with white chocolate dipped strawberries.

How to Make Chocolate Covered Strawberries for Easter
You can also decorate chocolate covered strawberries for the holidays and special events, like Easter, Mother’s Day, Valentine’s Day, or even Game Day and St. Patrick’s Day. I love making fun chocolate covered strawberries for the holidays!
One of my favorite holidays to make chocolate covered berries for is Easter. They’re so fun to serve for kids at an Easter egg hunt, and adults love them, too!
Easter Berries Ingredients
To make Easter-themed berries, you will need:
- Strawberries
- White chocolate
- Oil-based food coloring
- Sprinkles
How to Make Easter Berries
For carrot strawberries:
- Melt white chocolate in 30 second intervals in the microwave. Stir until smooth, then add orange food coloring and stir to combine until it is the color you want.
- Dip strawberries with the leaves still intact, up the body of the berry without covering the leaves.
- Place dipped strawberries on wax paper and allow to set.
- In the meantime, pour remaining orange chocolate in a piping bag or zip-lock bag. Cut a small tip off the edge of the bag.
- Drizzle over the berries to create decorative lines.
For bunny strawberries:
- Melt white chocolate without adding any food coloring. Dip berries in the chocolate to cover them completely and allow to set.
- Pipe a small mound of chocolate near the top of the berry and shake on sprinkles. To make them look like bunny tails, I made the piped chocolate slightly teardrop-shaped.
For decorated egg strawberries:
- Trim the leaves off of your strawberries. Melt white chocolate and dip berries to cover completely, then allow them to set.
- Stir in desired food coloring color and pour into a piping bag or zip-lock bag. Cut a small tip off the edge of the bag. Drizzle over top the berries and immediately add sprinkles.
How to Store Chocolate Covered Strawberries
You can store your chocolate dipped strawberries in the fridge for up to two days. Here are some tips on storing them properly:
- We recommend you avoid refrigerating them for as long as possible. Once you add them to the fridge, chocolate strawberries usually gather condensation and “sweat”!
- For the first day, you can keep them on parchment paper on a baking sheet to enjoy. Considering how yummy they are, we’re sure they won’t last that long!
- Cover them in wax or parchment paper, then place them in an air-tight container lined with a paper towel.
- If you put a little bit of baking soda on the paper towel, it will absorb moisture. Make sure to put another paper towel over top if you do this so you don’t get any of the baking soda on your strawberries!
