Hamburger Soup in Instant Pot
If there’s one meal I especially love cooking for my family, it’s soup. There are so many fun soups you can make, from 30-minute taco soup to chicken tortilla, chicken noodle, and Hungarian mushroom. We never get tired of soup! You could say I’ve had a lot of experience dreaming up soup recipes like this Instapot Hamburger Soup.
What I love most about it is how easy it is to make using leftovers, or even canned or frozen vegetables. It’s budget-friendly, wholesome, and packed with flavor. Perfect for cold days, or just when you want a nice bowl of warm comfort food!
Best of all, it’s ready in under an hour. Enjoy!
Love it! ❤️ Going to make it again. My family loved it.

Hamburger Soup Instapot Ingredients
- Olive Oil: Olive oil is used for sauteing the onion and garlic. Other vegetable oils, such as canola oil or avocado oil, can also be used.
- Ground Beef: I always use extra lean ground beef to help avoid too much grease. If you use fattier ground beef, you will need to drain some of the grease so the soup doesn’t become greasy. You can also use a mix of pork and beef for additional flavor, or swap the beef out for ground turkey. It’s up to you!
- Onion: Sweet yellow or white onion work best in hamburger soup. I do not recommend using red onion; the flavor is too overpowering.
- Garlic Cloves: Use fresh minced garlic cloves; I like to use a garlic press to make it easier.
- Carrots: Cut large, whole carrots into pieces for the best results. Baby carrots may become mushy.
- Potatoes: Large russet potatoes cut into small pieces work very well. However, other potatoes such as red potatoes or yukon gold potatoes may be used.
- Celery: Cut the celery into small pieces. It’s one of the primary ingredients for the base of any good soup!
- Beef Broth: Make sure to use broth, not stock. I do not recommend using other types of broth for hamburger soup. Beef works best.
- Bay Leaves: Enhances the overall flavor of the soup and adds depth.
- Worcestershire Sauce: A great addition to cheeseburger soup. It adds so much flavor to the broth!
- Diced Tomatoes: Use canned diced tomatoes; or, if you have them and would prefer to, you can also use fresh diced tomatoes.
- Tomato Paste: The strong, sharp tomato taste complements the other flavors of hamburger soup well.
- Vegetables: You can use any vegetables you wish. I’m using canned green beans, but you can also use frozen green beans, or other canned vegetables such as broccoli, peas, corn, or even leafy greens like kale. Hamburger soup is a great way to sneak a serving of veggies into your meals, even for picky eaters.
- Salt and Pepper: Basic salt and pepper is fine for this recipe, but I prefer kosher salt and freshly cracked black pepper.
- Italian Seasoning: Use my Italian seasoning blend, or a blend of Italian seasoning ingredients such as dried oregano, basil, sage, rosemary, thyme, and marjoram.
How to Make Hamburger Soup
- Set the Instant Pot to the saute function.
- Heat oil and add finely chopped onion and minced garlic. Stir for 1-2 minutes or until translucent.
- Add ground beef and cook until browned, stirring occasionally. Don’t stir too often or it won’t brown as well.
- Stir in chopped celery, chopped carrots, chopped potatoes, tomato paste, and can of diced diced tomatoes.
- Add beef broth, Worcestershire sauce, bay leaves, salt, pepper, and Italian seasoning to taste. Stir in canned vegetables.
- Close the lid and make sure the valve is in the Sealing position. Turn to Manual on high pressure and set the time to 8 minutes.
- When 8 minutes is up, let the pressure release naturally. If you are in a rush, wait 10 minutes, then carefully release it manually with a dishtowel or oven mitt. Carefully open the lid. Stir, serve, and enjoy!
Hamburger Soup Recipe FAQ
All of the ingredients for this Instant Pot beef soup are gluten-free., but please double-check the beef broth. Some varieties contain gluten.
Hamburger soup is a perfect make-ahead freezer meal. Store it in an airtight container, leaving about 1-2 inches of space above the soup in the container as the liquid will expand as it freezes. You can also freeze this soup in freezer bags.
You can make slow cooker hamburger soup easily! Using all the same ingredients, add everything to your slow cooker, stir to mix, then cook on high for 3 to 4 hours or on low for 6 to 8 hours, until the potatoes are nicely soft.
Hamburger Soup Recipe Tips
- Use extra lean ground beef because it has less fat. This will allow you to skip draining the fat. There’s still a little bit of fat left to add flavor to the soup. If you do use fattier ground beef, you will need to drain some of the fat when cooking.
- You can use fresh vegetables instead of canned vegetables if you prefer; just add them in at the same time as the carrots and potatoes.
