I’ll be the first to admit, I often find myself purchasing too much corn, especially during the late summer sales. The sight of those beautiful, juicy corn cobs is just too tempting to resist! I’ve been known to chow down on two or three ears of corn in a single setting – yes, I truly adore corn!
Fortunately, I know an easy, simple way to transform an ordinary cob of corn into one of the best side dishes you will ever try: elote seasoning! It’s a game-changer for any corn, especially the leftovers.
One of my favorite aspects of this recipe is how flexible and easy it is to swap out the ingredients. I remember the time I ran out of limes during a family BBQ, and the Tajin I added instead was a hit!

What Is Elote Seasoning?
This flavorful seasoning for corn is a classic on Mexican street corn, but what’s in it? The answer is a fairly lengthy (but easily found!) list of spices and herbs! Combining Mexican spices like chili powder and chipotle powder with the powerful flavors of cilantro, dried lime zest, and salty cheese, this seasoning is typically served sprinkled over corn with an extra topping of crema. Try it once; you’ll be hooked!

- Chili Powder
- Garlic Powder
- Parmesan Cheese, Grated; or Cotija Cheese (optional)
- Chipotle Powder
- Dried Cilantro/Coriander (optional)
- Paprika
- Cane Sugar
- Flake Sea Salt
- Lime Zest

If you do make the version with the crema, add the crema right after heating the corn so it can melt into the corn. The primarily oil-based mayo will melt like butter, so if added before heating, it will drip off entirely.
How to Make Elote Seasoning
- In a small bowl, mix together all of the ingredients.
- Cook corn to your preference, then season with the spice mixture. For added richness, use a little butter. You can also stir it into a bowl of shaved corn!

- I recommend grilling or roasting the corn. Grilling it without the husk is ideal for those delicious grill marks!
- You can leave out the cilantro if you don’t like it; it will still taste delicious!

Storing Elote Seasoning
- Fridge: Store the blended spices in an airtight container for up to 2 weeks.
- Pantry: If you leave out the Parmesan, you can store the seasoning blend at room temperature in a dry location with your other spices indefinitely. Sprinkle it on popcorn, vegetables, and more!
