Wagyu Burgers
The instant I got my hands on some Wagyu ground beef, I knew I had a mission: the best grilled burgers my family would ever try. I got home, whipped up some patties, and got to work.
I was not prepared for just how good they’d be. Wagyu beef burgers are one of those foods I’d heard mentioned alongside the names of top chefs and restaurants, but I’d never imagined how worth it they’d be!
And the best part? You can make restaurant-quality Wagyu burger patties right at home. Just fire up the grill, choose your favorite buns and toppings, and serve up burgers your family will remember forever. Just get ready to be asked to make them again- and again- and again!
What is a Wagyu Burger?
You might have heard about Wagyu beef, especially after Arby’s started selling the coveted beef in burger form. But what is Wagyu, and why is it so good for burgers?
The secret is the source. Wagyu beef comes from a Japanese breed of cow that has naturally very high marbling in their muscle structure, making for incredibly tender meat with a uniquely rich flavor. Wagyu ground beef is a one-of-a-kind treat!
You can find wagyu beef as Japanese wagyu beef, Australian wagyu, or American wagyu beef. There will be a difference, but either will work for this wagyu burger recipe.
Wagyu Beef Patties
Wagyu burgers are all about the meat, so it’s important to make the perfect beef patty! And if you’ve spent time grilling, you know there’s more to the perfect burger patty than just flattening beef into a disk.
- Temperature: Make sure to keep burger patties chilled by keeping them in the refrigerator right up until you start grilling. This will keep the fat from melting too early!
- Mixing: It’s incredibly important to not over-mix burger meat! Mix the meat for only 35-40 seconds. Once the meat is sticky, it’s ready to form!
- Forming: Form the patties into 1-inch-thick disks that are 1 inch wider than your buns, then press an indent in the center. This will ensure that when the burger puffs up, it’ll form a perfectly flat patty!
- Seasoning: Wagyu beef is extremely rich, flavorful and earthy, so it doesn’t take much seasoning. I recommend simple salt and pepper.

- Wagyu ground beef
- Cooked bacon slices – try out my Air Fryer Bacon!
- Cheese slices
- Burger buns
- Salt and pepper
- Optional: Tomato, lettuce, and condiments
How to Grill Wagyu Burgers
- Heat the grill to the highest heat setting, and form the beef into plump patties about 1 inch larger in diameter than your buns. Press an indent into each patty’s center.
- Right before you place them on the grill, season each side generously with salt and pepper. It’s hard to over-salt these burgers!
- Place the burgers on the grill and close the lid, then let them cook for 5 minutes without touching them. Open the lid, flip, and add cheese if desired, then close the lid and cook another 4-5 minutes.
- Remove the burgers from the grill and let them rest for about 5 minutes. Then place the patties on buns with the bacon and your favorite toppings, and enjoy!
Wagyu Burger Tips
- Wagyu beef is naturally incredibly tender and flavorful, meaning that they’re incredibly hard to overcook! Even a well-done burger will still be tender and juicy. If you want to monitor the temperature, use a meat thermometer.
- Always remember to salt the patties! Salt is an important aspect of the flavor, and will help form a lovely, crunchy crust on the surface of the meat.
- The most important thing about grilling burgers is not touching the burgers once they start cooking. Every time you move the burgers, they’ll lose some of that incredible, flavorful juiciness. Flip them only once!
- Any topping you like is great for Wagyu burgers, but I recommend not over-loading them! The beef is so flavorful that these gourmet burgers are at their best when the natural beef flavor can shine.

Hi Marilyn! You can usually find Wagyu beef at local butcher stores or specialty meat stores. Costco generally has wagyu as well. Enjoy!
