There’s something about this time of year that feels so full of life.

The days are getting longer, the light feels softer, and everything around us seems to be waking up again. It’s that gentle shift into spring that always inspires me to get back into the kitchen - not for anything complicated, but for those comforting, colorful dishes that bring everyone together around the table!
And now that we’ve talked all things Easter ham… I can’t stop thinking about the side dishes.

Because if I’m being honest, sometimes it’s the sides that truly steal the show!
The creamy mashed potatoes, the buttery roasted vegetables, that one dish someone always asks for every single year… those are the flavors that turn a meal into a memory. I love creating a table where every dish feels special - where there’s a little something for everyone, and every bite feels like spring.
This year, I’m dreaming about fresh, vibrant sides - dishes that feel light but still comforting. Think roasted carrots with a touch of sweetness, bright green vegetables, creamy casseroles, and those little nostalgic favorites that just belong on an Easter table.
- Old Fashioned Scalloped Potatoes with Ham
- Green Bean Almondine
- Truffle Mac and Cheese
- Southern Sweet Potato Casserole
- Creamed Corn
- Quick Dinner Rolls
It’s those finishing touches that make the meal feel complete.
And while I’m here thinking about Easter and all the meals we’ll share… my heart is completely full watching another kind of memory being made.

Rory and Aiden are at Disney World right now, and let me tell you - I don’t know who’s having more fun, them or me watching it all unfold through pictures!

There’s something so magical about seeing the joy through their eyes. The excitement, the wonder, the pure happiness in every moment. Of course, part of me wishes we could jump right in and be there with them… but at the same time, there’s something so special about watching your children create those memories with their own families.
It’s one of those full-circle moments that just fills your heart in the best way.
And it reminds me... whether it’s a big Easter table or a trip to Disney… It’s never really about the food or the place.
It’s about the memories we’re creating together!

Spring Dresses I’m Loving Right Now
