How to Make Strawberry Crepes
Making crepe filling: Place cream cheese, cottage cheese, sugar, and vanilla into a mixer. Blend until smooth. Let the filling rest in the refrigerator while you prepare the crepes.
Making the strawberry topping: Rinse, hull, and slice fresh strawberries. Toss the sliced berries with sugar and let them chill in the refrigerator until ready to serve. I also like to use mix it up and sometimes use this amazing fresh strawberry sauce as a topping.
Making crepe batter: Sift together flour, sugar, and salt. Set aside. Add eggs and milk to a large bowl and whisk together. Once well-mixed, slowly add the flour mixture just until smooth. Note: If you over-whisk the mixture, the crepes can become rubbery. This is why I do not blend the batter. After mixing, add melted butter to the batter.
Cooking the crepes: While a crepe pan or crepe maker are useful, any flat-bottomed pan will work. Lightly oil the surface and place it over medium heat. Pour two Tablespoons of crepe batter into the pan and rotate the pan to evenly distribute the batter. If you're using a crepe maker, you can use an offset spatula.
Flipping the crepes: When the edges begin to brown after approximately 30 seconds, turn the crepe and cook for another 10 seconds.
Serving the crepes: Spoon cream filling into the center of the crepe. Roll or fold, then top with macerated strawberries and serve. Feel free to add other fresh fruit and a sprig of mint if desired!
Crepe Recipe Variations
- Add banana: Make strawberry banana crepes by adding banana slices.
- Add Nutella: Use Nutella hazelnut spread instead of the cream cheese filling to make strawberry Nutella crepes.
- Strawberry jam crepes are also so easy and delicious.
- Fill with chocolate chips and drizzle with chocolate sauce or white chocolate sauce for chocolate strawberry crepes.
- Make a Strawberry Shortcake crepe and add whipped cream on top!
- Blackberries and raspberries are also delicious when used in this recipe.
FAQ
Don't over-mix the batter, or it will become rubbery. Refrigerate crepe batter for an hour ahead of time for lighter crepes. Use a heavy-bottomed pan with an even surface, or a crepe maker if you have one, and bring the pan to temperature slowly. Following these steps will give you perfect crepes.
Eat crepes for breakfast or dessert. You can top crepes with all the same toppings you love on pancakes, and they are guaranteed to be delicious. They're perfect as breakfast for dinner or served with brunch.
All-purpose flour makes perfect crepes. No need for any specialty flours!
