If there’s one thing I can’t get enough of, it’s bread pudding. It’s like comfort in a bowl: sweet, warm, oh-so-soft and begging to be paired with your favorite ice cream or a warm cup of milk and honey. Serving bread pudding is like serving a hug to your whole family.
So why not serve up a spin on it that can be enjoyed any time of day? That’s the beauty of pineapple casserole! Cooked up like a bread pudding but stuffed with sweet and tangy crushed pineapple, this pineapple bake recipe pairs beautifully with BBQ, ham, dessert, and more for a mealtime all-rounder.
And don’t get me started on how easy it is. Trust me – if you’ve only ever heard of pineapple casserole with Ritz cracker crumbs and cheddar cheese, you must try my bread pudding with pineapple. It’s the side dish you didn’t know you were missing!
Pineapple Bread Pudding Ingredients
- Butter
- Milk
- Sugar
- Eggs
- Crushed pineapple – you will need crushed pineapple, not cans of pineapple chunks or pineapple tidbits
- White bread
You may notice my recipe doesn’t include sharp cheddar cheese or crackers! Traditionally, southern pineapple casserole does include those two ingredients. However, my recipe makes a sweet-and-savory bread pudding-style dish. My family prefers a little extra sweetness with this dish, and I like to keep it simple.
It’s the perfect dessert for vanilla ice cream, or for serving as a delicious side for a summer potluck!
How to Make Pineapple Pudding
- Preheat the oven to 350℉. Grease a 9 by 13-inch casserole dish with cooking spray. While the oven heats, cream together the butter, milk, and sugar in a bowl using a hand mixer.
- Crack 4 eggs into the bowl, then add a can of well-drained crushed pineapple. Whisk to fully mix.
- Remove the crusts from 5 slices of white bread. Cut the bread into small cubes, then add them to the bowl with the pineapple mixture and fold together with a spatula.
- Pour the bread and pineapple mix into your prepared casserole dish and spread out evenly. Bake pineapple casserole, uncovered, for 1 hour.
- Serve while warm, and enjoy!
Baked Pineapple Recipe Tips
- Remember to grease the casserole dish with melted butter or cooking spray! This will keep the casserole from sticking and making cleanup a pain.
- I recommend using canned pineapple for the sweeter flavor, and draining all the juice. I like pouring the pineapple in a fine strainer and pressing down on it with a spatula to drain it well.
- For an extra twist, add maraschino cherries or slices of strawberry! You can even place slices of pineapple and cherries on top like an upside down cake.
- This side is perfect with holiday ham, or served alongside BBQ pulled pork. Or, serve it up for dessert with vanilla ice cream and whipped cream!

Pineapple casserole takes many shapes! Typically it comes either as a bread pudding style dish, such as my recipe, or as a savory dish cooked up with cheese and crackers as a topping. Each type has their merits! I like the bread pudding style to take the place of cornbread as a side.
Pineapple is naturally sweet and just a little tangy, so it pairs well with strong, savory flavors like ham, grilled or barbecued meat, and roast pork. Alternatively, it also pairs well with creamy, mild flavors, making it perfect for serving alongside vanilla ice cream or whipped cream!
You can easily make pineapple casserole ahead of time. If you’d like to serve it cold, it can be fully cooked and stored in the fridge for up to 5 days. If you’d like to serve it warm, prepare it up to the point of baking, then wrap the casserole dish in plastic and let it sit in the fridge until ready to bake.
Storing and Reheating Pineapple Bake
- Refrigerator: Wrap the casserole dish tightly in plastic wrap and store in the refrigerator for up to 5 days.
- Freezer: Transfer the casserole to a freezer-safe, airtight container, and freeze for up to 2 months.
- Reheating: Pineapple pudding does best reheated in the oven! Reheat in the oven at 350℉ for 15-20 minutes to re-crisp the crust and ensure it’s nice and toasty.
- Thawing: Bread puddings don’t do well in the microwave, so it’s best to thaw this pineapple pudding recipe in the fridge overnight.
