Fire up the grill for an all-in-one dinner option with shrimp foil packs! Cook them up on the grill for a summer BBQ or pop them in the oven for all the taste without the mess; this is one of those no-fuss dinners I serve up all year long!
What is a foil packet?
A foil packet is a cooking technique using aluminum foil. You easily create a packet or pouch for the ingredients you want. Then fold them up and cook either in the oven, on a grill, or even over an open fire.
My favorite thing about foil packets is that you can easily cook up tons of perfectly meal-sized portions for a crowd! I remember one summer where I made packets for my whole family get-together by fitting together packets in the grill like a shrimpy Jenga tower. It worked, and everyone loved it!
Don’t have a grill? Don’t worry! Shrimp foil packets in the oven have become a favorite at our house for quick and easy weeknight meals! I’ve included oven instructions as well to make sure you can enjoy this meal all year round.
Shrimp Foil Pack Ingredients
- Shrimp: You’ll want these shrimp to be shelled, so buy pre-shelled shrimp or shell them yourself. Be sure to save the shells for your own homemade Seafood Stock!
- Corn on the Cob: Shuck and clean the corn or buy it already shucked. You can use frozen corn, too, if you let it thaw first!
- Red Potatoes: The only thing better than a baked potato is a baked potato infused with the buttery, sweet, savory flavors of shrimp and corn!
- Unsalted Butter: I really recommend unsalted butter, as you’ll be adding salty seasoning.
- Lemon: Slice up a lemon and put a slice in each packet to add that perfect lemony twist that goes so well with shrimp!
- Old Bay Seasoning: I don’t know what I’d do without Old Bay! If you don’t have any, you can make a vague substitute using celery salt, paprika, black pepper, dry mustard, cayenne, and pumpkin pie spices.
- Parsley: You can use dry or fresh parsley for this recipe!
How to Make Shrimp Foil Packets
Shrimp Foil Packs on the Grill
- To assemble shrimp foil packs, you need four long sheets of aluminum foil, approximately 24 inches long.
- Cut red potatoes in half. Place them in a microwave-safe bowl, then microwave for 10 minutes to soften them up.
- Cut ears of corn into 1-inch sections. Then, slice the lemons into one-fourth inch slices and remove any seeds.
- To assemble the foil packets, place 3 pieces of potato, 2 sections of corn, 1 lemon slice, and 6-8 shrimp in the center of one piece of foil. Season with half a tablespoon of Old Bay seasoning, one Tablespoon of butter, and dried parsley. Begin to fold the foil packet. Continue this process until you have four shrimp foil packs assembled.
- Once you have your foil packets, place onto a preheated grill and cook over medium heat for 20-25 minutes or until the potatoes are soft and cooked through.
- Remove from grill and serve immediately.
Shrimp Foil Packets Oven Method
- To assemble your shrimp foil packs, you’ll first need four long sheets of aluminum foil, approximately 24 inches long. Then preheat the oven to 400°F.
- Before assembling the packets, cut the red potatoes in half and place them into a microwave-safe bowl. Microwave the potatoes for about 10 minutes to soften just a bit.
- Cut the ears of corn into 1-inch sections. Then, slice the lemons into ¼ inch slices and remove any seeds.
- To assemble the foil packets, place 3 pieces of potato, 2 sections of corn, 1 lemon slice, and 6-8 shrimp into the center of one piece of foil. Season with ½ Tbsp. Old Bay seasoning, 1 Tbsp. butter, and dried parsley and begin to fold the foil packet. Continue this process until you have four shrimp foil packets assembled.
- Place the packets on a tray (in case of leaks!), then place the tray in the oven and bake for 20 minutes, or until the potatoes are completely cooked through.
- Remove from the oven and serve!
How to Fold Foil Packets
- Begin by folding the bottom half of the foil up until it covers half of the ingredients.
- Then, fold the top side down over the other half of the ingredients.
- Finally, fold in both of the sides until you have a nice foil packet.
- It’s okay to have a small opening at the top; this will allow room for steam to expand as it cooks.
Make-Ahead Shrimp and Potato Foil Packets
One of my favorite things about my grilled shrimp foil packets recipe is that it’s perfect for making ahead. Just assemble the packets, then stack them up in a cooler or the fridge and they’re ready to pop in the oven or right on to the stove!
If you’re looking for a recipe for camping, these foil packs are the way to go. Make as many as you need, store then in your cooler, and bust them out to cook up over a campfire grill.
Shrimp Foil Pack FAQ
You absolutely can! I’ve made these packs with sliced bell peppers and onions before and they’re always delicious. Just make sure that any very hard vegetables such as squash or rutabaga are softened up ahead of time.
Old Bay has a complicated list of ingredients, but you can make a rough approximation of it by blending together 2 Tablespoons of celery salt with a half teaspoon of Paprika, Cayenne, black pepper, and a pinch of each cloves, allspice, cinnamon, cardamom, ginger, and dry mustard.
