Do you ever notice how some of life’s best moments come from plans gone sideways? That was us this week — and what a gift it turned out to be.
Organization has never exactly been one of Ron’s top strengths (bless his heart). Well, wouldn’t you know… our home was rented out and Ron realized he had signed up for a golf tournament at Currahee Club. Cue the scramble!
Thankfully, dear friends of ours invited us to stay at their lake house — and what a treat that turned out to be. Their home had the most breathtaking views. There’s just something about sipping your morning coffee on a deck overlooking the water that fills your soul. And the sunset boat cruise? Pure magic.
They truly spoiled us, and I’m not going to lie… Now I can’t stop daydreaming about owning a little lake house of our own. (Yes, I confess — I scroll Zillow daily!) Maybe one day.
In true Sunday Supper spirit, we wanted to gift them an experience — so we showed up with two giant tomahawk steaks. I whipped up my saucy shrimp and baked both sweet and regular potatoes.
Once we saw the size of those steaks, we decided to invite four more friends over — and just like that, we had a party on our hands. Laughter echoed through the house as we gathered around their table, made memories, and shared one of those meals you just know you’ll always remember.
While the guys played in the golf tournament the next morning, we went exploring and discovered Desoto Falls. It was absolutely stunning and reminded me, once again, how much beauty is all around us — and how lucky we are to experience it.
I left feeling refreshed, inspired, and overflowing with gratitude. For the friends who open their doors and hearts. For unexpected adventures. For meals that bring us closer. And for all of you who remind me, week after week, that the table is a sacred place to gather, laugh, and share life.

Today’s Word of the Day is: Chouriço - a traditional Portuguese sausage, seasoned with garlic and paprika. It’s similar to Spanish chorizo, but with its own distinct flavor and preparation style. Often grilled, sliced, or used in stews, it’s a staple in many Portuguese kitchens.

- Sunday: Oven Roasted Chicken (Happy Mother's Day!)
- Monday: Fiesta Chicken (with your leftover chicken)
- Tuesday: Chicken Alfredo (with your leftover chicken)
- Wednesday: Chicken & Cheese Quesadilla (with your leftover chicken)
- Thursday: Strawberry Chicken Salad (with your leftover chicken)
- Friday: Grilled Ribeye Steak
- Saturday: Steak and Potatoes (with your leftover steak)
Prep Plan:
On your prep day, go ahead and make the oven roasted chicken! This one dish sets you up for nearly the whole week...
- Shred the leftover chicken and store it in an airtight container. You'll use it for: Monday, Tuesday, Wednesday, and Thursday's meals!
- Chop all your produce (onions, peppers, garlic, salad greens, strawberries) and store in separate containers or bags to save time each day.
- Boil all of the pasta or rice on Sunday to help cut down on dishes later in the week. You can make extras too, for an easy side dish!
- Grill the ribeye steaks on Friday, and slice up the leftovers right away. This makes Saturday's steak and potatoes a breeze to throw together.
