- Baby Potatoes: You will need 2 pounds of baby potatoes that have been washed and dried. Because you're not peeling the potatoes, make sure to give them a good scrub to remove any dirt and debris.
- Olive Oil: I recommend using light olive oil or avocado oil when air frying baby potatoes due to its high smoke point, but you can also use extra virgin olive oil if it's what you have. Don't use butter - it will burn!
- Fresh Rosemary: Fresh herbs add flavor and color to these baby potatoes - rosemary is my favorite, but you can also use thyme. If you don't want to use fresh herbs, just use dried herbs and add them to the seasoning mix. Make sure to use less when using dried herbs, as the flavor is more concentrated.
- Seasoning: For the baby potatoes seasoning, you will need coarse salt, black pepper, garlic powder, and onion powder.
- Green Onion: Fresh chopped green onion adds color, flavor, and brightness to a side dish of air fryer baby potatoes. You can leave it out if you like, but I definitely recommend giving it a try.
- Parmesan Cheese: While optional, Parmesan cheese is always a welcome addition to baby potatoes in the air fryer. I recommend using freshly grated Parmesan, although pecorino romano will work, too.

- 2 Tablespoons chopped fresh Rosemary - or dried Rosemary
- 2 Tablespoons Olive Oil
- 1½ teaspoon coarse Salt - divided
- ½ teaspoon ground Black Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 Green Onion - chopped
- 4 Tablespoons grated Parmesan Cheese
Instructions
- Preheat air fryer to 400°F. Wash the Potatoes and pat dry.2 pounds Baby Potatoes
- Chop fresh Rosemary, and set aside.2 Tablespoons chopped fresh Rosemary
- Place Oil in medium size bowl, and add Potatoes. Mix with spoon until all are well coated.2 Tablespoons Olive Oil
- Add 1 teaspoon Salt, Pepper, Garlic Powder, Onion Powder, and chopped fresh Rosemary. Mix with spoon, or rub in with fingers. Or, you can use your favorite spices.1½ teaspoon coarse Salt,½ teaspoon ground Black Pepper,1 teaspoon Garlic Powder,1 teaspoon Onion Powder
- Spray air fryer basket with non-stick coating, and place Potatoes in the air fryer basket, careful to keep them from overlapping. If necessary, fry potatoes in batches.
- Cook until Potatoes are cooked through and soft when tested with fork, about 15-20 minutes, depending on potato size. Half-way through baking, shake basket to turn potatoes.
- While Potatoes are baking, chop Green Onion, and set aside.1 Green Onion
- When done, allow to cool for 3 minutes.
