If you're a fan of the classic Bisquick impossible cheeseburger pie, you are going to love my recipe for cheeseburger pie. Although it uses simple ingredients and takes just minutes to assemble, it has so much flavor and is always a hit for family meals. I tell you, my grandkids love it! This is a great dish for meal planning because it freezes well, makes plenty for leftovers or feeding a crowd, and is budget-friendly.
I'll show you how to make cheeseburger pie using easy-to-find, simple ingredients, many of which you may already have on hand. Plus, I'll share my expert tips, answer FAQ, and give serving suggestions and freezing instructions!
Tools to Make Cheeseburger Pie with Pie Crust
- A deep 9-inch pie dish. This cheeseburger pie is literally a pie - it bakes in a pie crust! So you will want to have a pie dish. If you don't have a pie dish, you could always try using a deep baking dish as long as you can form the pie crust to fit in it.
- A skillet. This is my favorite skillet, and what I always recommend. In this recipe, you'll use a skillet to brown the ground beef before the pie is baked.
Ingredients in Cheeseburger Pie without Bisquick
My recipe is for a cheeseburger pie without Bisquick, using refrigerator pie crust instead. However, if you want to use Bisquick, I've included instructions in the FAQ section below the recipe card.
- Pie crust: I recommend using pre-made pie crusts, as this is supposed to be an easy dinner recipe and the pre-made ones are perfect for that!
- Ground beef: You can use any ground beef, from fatty to lean. I typically use 80/20 ground chuck. But, you can also swap it out for ground turkey, or use a pork and beef mixture.
- Burger seasoning: I use my own famous burger seasoning, which is the best you'll ever try - I'm serious! Feel free to swap it out for your favorite seasoning mix, or even try using my seasoning for tacos to make it like a taco burger pie.
- Cheddar cheese: I vary up the cheeses I use, but cheddar is a super popular choice in my house, especially on burgers. It's just as good in burger pie! Feel free to swap it out for shredded American cheese, Monterey Jack, or Mozzarella. These are just a few suggestions!
- Mashed Potatoes: Mashed potatoes make the perfect creamy, savory topping for Impossible pies, making them similar to shepherd's pie. I use leftover mashed potatoes, but you can use Instant mashed potatoes, in a pinch.
- Canned diced tomatoes with green chilies: I can't go without a can of diced tomatoes with chiles in the pantry! They add a ton of great flavor to just about anything you add them to, and are delicious in this burger pie recipe.
- Salt and pepper: Add salt and pepper to taste; I like to add a fair bit of salt. As always, I recommend kosher salt or sea salt flakes and not table salt.
- Fresh tomatoes (optional): I like to dice up some fresh tomatoes as a juicy topping, but you can leave them out if you prefer.
- Worcestershire sauce (optional): You can add a dash of Worcestershire sauce to the beef for an extra hit of flavor.

Cheeseburger Pie with Pie Crust

- Pie crust - pre-made
- 1.5 lb. Ground beef
- 8 oz Cheddar cheese
- 2 cups Mashed potatoes - instant, leftover, or fresh
- 3 Tablespoons Burger seasoning
- 1 can Diced tomatoes and green chilies
- Salt and pepper - to taste
- 1 medium Tomato - sliced
Burger Seasoning:
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 Tablespoon Paprika
- 1 teaspoon Onion powder
- 2 teaspoons Garlic powder
Instructions
- Preheat the oven to 425°F. While it's heating, place the pie crust in a deep 9-inch pie dish. Poke a bunch of holes in the crust using a fork to prevent bubbling, then pre-bake the crust for 7 minutes.Pie crust
- While the pie crust pre-bakes, place the ground beef and burger seasoning in a large skillet and brown the beef.1.5 lb. Ground beef,3 Tablespoons Burger seasoning
- Add the can of tomatoes and chilies. Cook for another 2 minutes and drain the liquid. Alternative: Keep cooking the beef and tomatoes together until the liquid has significantly reduced and is thick and saucy, and leave it in.1 can Diced tomatoes and green chilies
- Add the ground beef mixture to the baked pie crust, and top with the prepared mashed potatoes in a smooth layer. Sprinkle on the salt and pepper, then top the entire thing with plenty of shredded cheese.8 oz Cheddar cheese,2 cups Mashed potatoes,Salt and pepper
- Place in the oven and bake another 10 minutes, until heated through, melted, and bubbly.

Notes
- If you don't have leftover mashed potatoes, you can use Instant mashed potatoes. They don't have the same texture, but will work in a pinch!
- Make this pie ahead of time as a make-ahead recipe! Just fully assemble it, cheese included, then wrap the pie dish with plastic wrap and place in the refrigerator. Bake for an extra 10 minutes once ready to serve, and enjoy!
- This pie can be assembled and frozen for later! Fully assemble the pie, then wrap it tightly in foil and freeze for up to 3 months. To bake, place frozen in the oven with the foil still on and bake for 30 minutes. Then remove the foil and bake another 5 minutes, until bubbly and melted.
- This is a great recipe for hidden veggies! Add in finely diced veggies like broccoli, potatoes, or cauliflower to the ground beef mixture. They'll disappear into the pie, making it the perfect dinner for picky kids. And of course, you can't go wrong pairing it with french fries!

Note: My cheeseburger pie recipe uses prepared mashed potatoes. I personally love to make a big batch of my creamy mashed potatoes over the weekend with a Sunday roast, then use the leftovers to make this pie. It's delicious.
1: Bake Crust
Preheat the oven to 425°F. While the oven is heating, place the pie crust in a deep 9-inch pie dish. If you don't have a pie dish, you can use other deep baking dishes, like a small rectangular dish, as long as the pie crust fits properly into the dish. Poke a bunch of holes in the crust using a fork to prevent bubbling, then pre-bake the crust for 7 minutes.
2: Brown Beef
While the pie crust is in the oven pre-baking, place the ground beef and burger seasoning in a large skillet and cook the beef until browned. When you first add the beef to the skillet, don't move it around too much. Let it develop a nice browned crust, then start to break it up. I recommend using my burger seasoning. It is great for this pie.
3: Add Tomatoes
Add the can of tomatoes and chilies. Cook for another 2 minutes and drain the liquid. Alternatively, leave the liquid in, and simply keep cooking the beef and tomatoes together until the liquid has significantly reduced and is thick and saucy. Do what works best for you!
4: Layer Pie
Add the ground beef mixture to the baked pie crust, and top with the prepared mashed potatoes in a smooth layer. Sprinkle on the salt and pepper, then top the entire thing with plenty of shredded cheese.
5: Bake Pie
Place in the oven and bake another 10 minutes, until heated through, melted, and bubbly.
6: Serve
Remove from the oven, top with fresh tomato slices, and serve!
Expert Tips
- If you don't have any leftover mashed potatoes, you can use Instant mashed potatoes. They don't have the same texture, but will work in a pinch!

- This is a great recipe for sneaking in veggies for kids! Add in finely diced veggies like broccoli, potatoes, or cauliflower to the ground beef mixture. They'll disappear into the pie, making it the perfect dinner for picky kids. And of course, you can't go wrong pairing it with french fries!
- You can drain the meat as you cook it, or leave in the liquid and simply cook it down by letting the meat simmer. Letting it cook down will add tons of flavor, but also leaves in additional fat. It's up to your preference!
Storing Leftovers
- Refrigerator: Leftover pie can be stored right in the pie tin by wrapping it in plastic wrap and placing it in the fridge.
- Freezer: I don't recommend freezing the pie once cooked, as it doesn't play well with the melted cheese. But, you can freeze it before you bake it! Follow the below freezing instructions.
- Reheating: Leftovers can be reheated in the microwave by the slice, or wrapped in foil and placed in the oven for reheating the entire pie at once.
Freezing Cheeseburger Pie
This pie can be assembled and frozen for later! Fully assemble the pie, then wrap it tightly in foil and freeze for up to 3 months. To bake, place frozen in the oven with the foil still on and bake for 30 minutes. Then remove the foil and bake another 5 minutes, until bubbly and melted.
What to Serve with Cheeseburger Pie
Burger Pie Variations
- Mushroom Swiss Cheeseburger Pie: Add fresh or canned sliced mushrooms to the ground beef while it cooks, and replace the cheddar with shredded Swiss or Gruyere cheese. I love this; it's just like my super popular swiss and mushroom burgers!
- Santa Fe Cheeseburger Pie: Add diced jalapeno peppers, a squeeze of lime juice, and a diced onion to the ground beef mix, then top the baked pie with slices of fresh avocado and a garnish of cilantro. Flavorful and so easy!
- Cowboy Burger Pie: Add bacon bits and 2 Tablespoons of sriracha to the ground beef, then top the potatoes and cheese with dried French onions. Once baked, add sliced fresh avocado and spicy mayo!
- Big Mac Cheeseburger Pie: Top the pie with shredded lettuce, sliced dill pickles, finely diced onions, and a Big Mac sauce made from mayo, paprika, pickle relish, and mustard! You can also use my amazing sauce for burgers.
FAQ
If you don't have leftover mashed potatoes, it's possible to make Instant packet potatoes taste great, too! To do so, use chicken broth instead of water, then add in a dash of cream, a big spoonful of sour cream, and a diced clove of garlic briefly sauteed in 2 Tablespoons of butter.
Yes! Although I use a pie crust to make my cheeseburger pie to save on time, you can use bisquick. It will take just a bit longer, but is a classic, too. To do this, prepare your ground beef as normal. Add it to a deep baking dish/pie plate with your cheese and seasoning as instructed. Mix together half a cup of bisquick with 1 cup milk and 2 eggs, then pour the bisquick mixture into the baking dish. Bake as instructed for about 30 minutes. A knife or fork inserted into the center of the pie should come out clean.
