You might know this already, but I’m a big fan of egg rolls. If they’re an option, you can bet I’ll be filling my plate with at least three or four of them! The crispy exterior and juicy, tender fillings; what’s not to love?
The first time I tried Philly steak egg rolls was when Ron and I visited a friend in Texas. We went to his favorite steakhouse, and when I saw them on the menu, I couldn’t resist!
When I tell you I was immediately hooked, you have to know I came home and made my own in the air fryer right away. And then I made them over and over again until they were perfect – that’s this recipe for cheesesteak egg rolls!
Crispy, crunchy, and stuffed with melted cheese and tender steak, there’s nothing like them. You’ll crave another batch!

Why You’ll Love My Philly Cheese Steak Rolls
- Crispy texture without deep frying! By using the air fryer, you can get that crispy, delicious crunch without all the mess of a deep fryer.
- Great for tough cuts of steak like flank steak, or anything you can find on sale!
- Perfect for making ahead and freezing! I love making double or triple batches, rolling up the egg rolls, then freezing them in plastic bags. Then you can pop them in the air fryer at any time for a quick appetizer!
- Easy and fun – making egg rolls takes a bit of hands-on time, but it’s tons of fun and you can get your family involved!
- Easily customizable! Add in mushrooms, swap the steak out for ground beef, or use provolone cheese or American cheese instead of Monterey Jack. It’s all up to you!
Philly Cheesesteak Egg Rolls Ingredients
- Egg Roll Wraps: You can make your own, but I highly recommend just buying some egg roll wrappers. You can usually find them in the refrigerated section of the grocery store by the vegan options and salad dressings, or frozen.
- Eye Round Steak: To be honest, pretty much any steak cut will work perfectly. It’ll be cut up into tiny pieces, so use whatever steak you can get your hands on! This is a great way to use up budget steak cuts.
- Olive Oil: The olive oil will be used to brush on the air fryer basket and the egg rolls themselves to give them that crisp coating! Don’t use cooking spray; it can damage the nonstick on your air fryer basket.
- Green Bell Pepper: Green bell pepper has the best flavor for cheesesteak, with a nice bitterness that offsets the cheese and rich beef. If you prefer, you can use other colors of bell pepper.
- Onion: Yellow onion or sweet onion works best, in my experience! They have the best flavor and soften up well.
- Worcestershire Sauce: Worcestershire sauce will add great flavor to both the beef and the drippings that will turn into au jus!
- Monterey Jack Cheese: Monterey Jack is a classic for cheese steak! Make sure to get blocks, not shredded cheese. Shredded cheese has a powdery coating that clumps up and prevents proper melting. You can also use pepperjack cheese!
- Salt and Black Pepper: Salt and pepper add that final touch of flavor! Adjust them to your tastes.
Isabel’s Top Tip
Save those drippings! The drippings can be whipped up into a super fast Au Jus, which is the perfect dipping sauce for these incredible egg rolls. It only takes 5 minutes, and tastes super delicious. Like a French Dip but in egg roll form!
How to Make Philly Cheesesteak Rolls in the Air Fryer
1: Cook the Veggies
Add the olive oil to a large skillet over medium heat, and add in the chopped green peppers and onions. Cook until softened, about 5 minutes.
2: Add the Steak and Seasonings
Add in the worcestershire sauce, steak, minced garlic, salt, and pepper, and cook until the steak is browned. Drain the liquid into a bowl for au jus, and set aside.
3: Assemble Egg rolls
Preheat the air fryer to 380°F. Lay out the egg roll wrapper in the shape of a diamond. Place 2 to 3 spoonfuls of meat in the center of the wrapper, then 2 tablespoons of your shredded cheese.
2: Fold the Corners
Lightly wet the edge of the wrapper with water. I like using a sponge brush- it makes it super-efficient! Fold left and right corners into the center.
3: Close the Egg rolls
Fold the bottom corner and roll the egg rolls shut, squeezing the air out as you roll. Lightly wet the exposed corner to seal it down.
4: Place in Air Fryer
Wipe the air fryer basket with olive oil, and brush the egg rolls with olive oil as well. Then place them in the air fryer, ensuring none are touching.
5: Air Fry the Egg rolls
Air fry at 380°F for 8 minutes, flipping them halfway, until the wrappers are browned and crispy. Let cool for 5-10 minutes.
6: Serve and Enjoy!
Once cooled, serve with your favorite dipping sauces (I’ve included a list of my own) and enjoy!
Isabel’s Air Fryer
It’s amazing what you can cook with an air fryer! I love mine and highly recommend it. It even has a steaming function to re-hydrate stale bread!

Tips for Making Egg Rolls
- Cutting the steak into even, small slices will help make filling the egg rolls evenly easier.
- I recommend covering the egg roll wrappers with damp paper towels to prevent them getting dry and crumbly as you work!
- Add extra seasonings as you see fit! You can always add garlic powder or cayenne for extra flavor!
- You can also make this recipe with leftover steak! Just slice the steak into tiny bits and reheat it in the pan with the veggies, just enough to soak up the flavor of the sauce.
Storing Leftover Egg Rolls
- Refrigerator: Store leftover egg rolls in the fridge for up to 5 days. I recommend storing them in a plastic bag or tight airtight container lined with paper towels to soak up excess moisture.
- Freezer: Fully cooked egg rolls can be frozen and stored for up to 4 months! Lay them out on a baking sheet and place in the freezer until frozen, then place in a freezer-safe plastic bag.
Reheating Egg Rolls
- Fastest: Microwave egg rolls for 1-2 minutes if thawed and 3-4 minutes if frozen, until heated through. Let rest for at least 1 minute afterwards to avoid being burned by hot spots! This is the fastest way, but the egg rolls won’t be crunchy.
- Best: Place egg rolls back in the air fryer and air fry at 350°F for 5 minutes if thawed, 8 minutes if frozen. Let rest for at least 1 minute to avoid hot spots! This will ensure that the egg rolls are nice and crunchy.
Make-Ahead Cheesesteak Egg Rolls
Egg rolls are one of my favorite make-ahead appetizers. To make them ahead of time, prepare the egg rolls all the way up to the point where you would air fry them. Instead of cooking them, place the rolls in freezer-safe bags and freeze them for up to 4 months!
To cook from frozen, just air fry for an extra 5 minutes to ensure the middle fully heats through.
You can also make them ahead and store them in the refrigerator for up to 12 hours before cooking them! To ensure they don’t dry out, cover them with a damp kitchen towel.

Steak Eggrolls FAQ
Absolutely! While these egg rolls are designed to mimic Philly cheese steaks, you can absolutely make them with chicken or pork, too. I’ve also made these with ground beef and they tasted delicious!
I tend to prefer monterey jack, which has a mild, slightly sharp flavor that pairs well with the steak and vegetables without overpowering them. However, I love changing it up by adding smoked provolone or pepper jack! The most important thing is that the cheese should melt well and not be too overpowering.
