Making Teriyaki Sauce
I’m a big fan of teriyaki sauce. My favorite way to serve it is with hibachi steak, a side of perfect rice, and stir-fried vegetables, but any way you serve it, there’s no going wrong!
For years, I’ve been making a simple teriyaki sauce recipe using a handful of easy ingredients. You don’t even have to cook it – just add everything to a bowl, stir, and serve however you like.
Once you learn how to make teriyaki sauce my way, I know you’ll want to ditch the store-bought bottle for good. Teriyaki sauce homemade is just too good not to make every time!
What is teriyaki sauce?
Teriyaki is a Japanese sauce recipe traditionally containing soy sauce, mirin, sake, and sugar. It’s versatile and pairs with a variety of dishes, such as the classic chicken teriyaki.
My recipe for teriyaki sauce uses altered ingredients to keep it simple and more accessible if you aren’t able to get your hands on traditional ingredients. It’s also delicious!
This sweet-and-savory sauce recipe goes well with everything from fish to vegetables, Japanese chicken recipes, steak stir fry recipes, pork cutlet recipes, and noodle stir fry. Try brushing it over seafood or meats before grilling.
It is by far my favorite sauce for Japanese recipes, but it also pairs perfectly with other dishes. Especially Shrimp Shumai, Thai Chicken Meatballs, or Thai Sausage Rolls!
Teriyaki Sauce Ingredients
- Soy sauce
- Rice wine vinegar
- Sriracha sauce
- Ginger, finely chopped, or ground ginger
- Garlic cloves, smashed and finely chopped, or garlic paste
- Green onions, thinly sliced (both green and white parts)
- Orange, zested
How to Make Teriyaki Sauce
- Add soy sauce, rice vinegar, Sriracha sauce, finely chopped ginger, minced garlic cloves, sliced green onions, and orange zest to a medium bowl.
- Mix together until fully combined. If you like, heat it up in a small saucepan on the stove on low until it warms through and reaches the consistency you like. Enjoy!

Teriyaki Sauce Recipe Tips
- You can heat up your sauce in a saucepan on the stove on low, or microwave it on low, to thicken it. You can also add a cornstarch slurry or potato starch while heating (see below).
- How long you need to microwave teriyaki sauce depends on how much of the sauce you are heating. I recommend heating in 30 second intervals!
- If you aren’t heating the sauce but don’t want to use raw garlic, simply saute the garlic for 30 seconds to 1 minute until fragrant before adding it.
- This recipe for teriyaki sauce makes about 1.5 cups of sauce. Use about 2 Tablespoons for a dipping sauce or glaze, depending on the recipe.
- Use this homemade teriyaki sauce recipe as a marinade for everything from steak to seafood, chicken, and pork. It has a rich flavor perfect for pairing with many different dishes.
- To lower the sodium in this teriyaki sauce, use a low sodium soy sauce.
Gluten-Free Teriyaki Sauce
You can make this easy teriyaki sauce recipe gluten-free with a soy sauce substitute. Soy sauce contains gluten, so simply use a gluten-free variety of soy sauce, tamari shoyu, or coconut aminos instead.
What is the best way to thicken teriyaki sauce?
- In a small bowl, whisk together 1 Tablespoon of cornstarch or potato starch with 1 Tablespoon of water until smooth.
- Pour into the small saucepan with the 1.5 cups teriyaki sauce and cook over medium heat, whisking often, until the sauce has thickened.
I like to store my sauce on the thin side to use as an easy glaze. If you’d like to thicken the sauce further, you can simmer it longer on the stove to reduce the mixture, or stir in cornstarch or potato starch as a thickener.

Storing Leftover Teriyaki Sauce
Store homemade teriyaki sauce in an air-tight container in the refrigerator for up to 5 days.

- 1 Tablespoon Sriracha sauce
- 1-inch piece ginger finely chopped, or ¼ teaspoon ground ginger
- 3 garlic cloves smashed and finely chopped, or 1½ teaspoons garlic paste
- 1 scallion or green onion, thinly sliced (both the green and white parts)
- 1 orange zested

- Add ¾ cup soy sauce, ½ cup rice wine vinegar, 1 tablespoon Sriracha sauce, finely chopped 1-inch piece ginger, 3 finely minced garlic cloves, 1 thinly sliced scallion, and the zest of 1 orange to a medium bowl.
