My Banana Bread Waffles are everything you love about sweet, warm banana bread in an easy waffle batter! This banana waffle recipe makes a sweet breakfast and brunch that comes together in no time.

Banana Bread Waffles
This recipe is always a hit at brunch and at sleepovers! I love setting up a waffle bar and letting everyone add their own toppings! I make the waffles ahead of time and let everyone warm them up in the toaster and have fun adding their own toppings.
Who doesn’t love a good banana bread recipe? It makes a fun breakfast for dinner too.
These are so good my teenage son just forgot his phone in the kitchen because he was focused on eating and then he asked for seconds.

Equipment
- Waffle maker or mini waffle maker
- Whisk or electric hand mixer
- Fork
- Two mixing bowls and one small bowl
- Cooking spray
- Spatula
Like any waffle recipe, banana bread waffles are best made using a waffle maker or even a mini waffle maker (which is what we use!).
Banana Bread Waffle Ingredients
- ripe bananas
- melted butter
- brown sugar
- white sugar
- eggs
- vanilla extract
- sour cream
- flour
- baking powder
- baking soda
- cinnamon
- salt
How to Make Banana Waffles
- Peel ripe bananas and place them in a bowl. Mash with a fork until they reach a smooth consistency.
- Combine melted butter with white sugar in a bowl. Blend using a whisk or electric hand mixer until creamy and smooth.
- Thoroughly beat eggs in a small bowl, then add them to the bowl with the butter mixture.
Add vanilla extract and mix well. Finally, stir in mashed bananas and sour cream, then mix together thoroughly. - In a separate bowl, sift flour.
Mix with baking soda, baking powder, cinnamon, salt, and brown sugar. - Add your dry ingredients to your wet ingredients and mix together until a smooth batter.
- Spray the inside of your waffle maker with cooking spray. Take 1 large spoonful of batter (or more if using a regular size waffle maker) and place in the center of the waffle maker.
- Press down and hold the lid for 2-3 minutes or until golden brown. Serve with your favorite waffle toppings, and enjoy!

How to Make Waffles in a Pan
If you don’t have a waffle maker, you can still make these waffles by preparing them in a pan. They won’t look like waffles, but will still taste delicious.
- Follow the above instructions to prepare your waffle batter.
- Carefully scoop a spoonful or so of batter into the pan to form your waffles.
- Cook, as if cooking pancakes, until brown on one side, then flip. When the batter is ready to be flipped, the edges will whiten and the top will bubble slightly. Waffles in a pan will turn out slightly thicker than pancakes.
Waffle Toppings
You can enjoy much more than just classic butter and maple syrup on your banana waffles! Here are a few suggestions:
- Banana slices
- Chopped nuts
- Chocolate Chips
- Butterscotch Sauce
- Berry Compote
- Whipped cream
- Ice cream
How to Freeze Waffles
- Let the waffles cool. Then, place them on a baking sheet in the freezer until frozen solid.
- Once frozen, transfer to freezer-safe plastic bags and label with the date.
- When ready to enjoy, pull from the freezer and toast until reheated.
This homemade waffle recipe will last up to 3 months in the freezer.
Recipe Tips
- Make sure to use ripe bananas! They will make a much more flavorful banana bread batter.
- Let the waffle iron heat up before you add the waffle batter.
- Leave some lumps in the batter—it’s better that way.
- You can reheat waffles in the toaster or place them in the oven at 250°.
- If you’re making multiple batches, you can keep your first few waffles warm by setting them on a baking tray in the oven on very low heat.
- Cook for longer for crispier waffles.

Peanut butter and maple syrup mixed together is one of my favorites!! It would be lovely with these waffles for sure, but is also great on toast or ice cream.
