Grill Potatoes in Foil
Grilling potatoes brings out their best flavor. I love grilled potato recipes, and these garlic herb potatoes are easily one of my favorites.
This side dish is perfect for camping, birthday parties, or any get-together! They can easily be made ahead of time and are packed with flavor. It truly doesn’t get any easier than these foil potatoes on the grill!
The best part about these easy grilled potatoes in foil is that you can make them on the grill or in the oven with only five minutes of prep. Coated with a buttery herb and garlic dressing, foil-pack potatoes are delicious!
My kids love making this easy potato recipe. It is the perfect recipe to gets kids cooking.

Foil Potatoes on Grill Ingredients
- Baby Potatoes: I’m using baby gold potatoes for this recipe. You can also use baby red potatoes. Do not use larger potatoes.
- Olive Oil: For coating the potatoes in seasoning. You can also use avocado oil, but I find olive oil more flavorful.
- Rosemary: Use fresh or dried rosemary according to your preferences.
- Thyme: Just like rosemary, you can use fresh or dried thyme according to what you prefer.
- Garlic Cloves: You’re grilling these potatoes in foil with whole garlic cloves. You don’t need to mince them. Just add them to the pack with the potatoes and they’ll absorb the garlic flavor.
- Sea Salt: I use Maldon sea salt flakes for the best taste. You can also use kosher salt. I recommend avoiding table salt.
- Black Pepper: Freshly cracked black pepper tastes the best.
- Butter: Use unsalted butter, or, if using salted butter, make sure to add less salt when seasoning.
- Fresh Parsley: Top with chopped fresh parsley after cooking, if you prefer.
- Aluminum Foil: This is for wrapping the potatoes to grill!
The smell of these roasted potatoes on the grill will hit you before you even have a chance to catch a glimpse of them!
Rosemary and garlic butter sauce in foil, roasting with baby potatoes… once you unwrap these foil packet potatoes, it’s all over. It’s just a matter of seconds before they disappear.
Potatoes in Foil on the Grill Instructions
- Preheat grill to medium.
- Chop baby potatoes into bite-sized pieces then place in a large bowl and mix with oil, seasoning, whole garlic cloves, and dried rosemary or my garlic butter recipe.
- Transfer the potatoes to a piece of foil around 28 inches in length. Bunch the potatoes in the middle of the foil, place sprigs of thyme or dried thyme on top, and add a tablespoon of cubed butter.
- Bring the edges of the foil together and wrap.
- How long to cook potatoes on the grill: Grill for 40 minutes, then remove from the grill and open up the foil. Remove the thyme and add in more butter and seasoning, then return to the grill with the foil open and cook for another 15 minutes or until golden brown.
- Top with parsley (optional) and enjoy!
How Long to Grill Potatoes in Foil
I like to grill the baby potatoes for approximately 40 to 45 minutes. This will give you fork-tender, delicious potatoes that aren’t too soft. If you use larger potatoes, you must extend the cooking time. I recommend you stick to baby potatoes or cut your pieces very small.
How to Roast Potatoes in Foil in the Oven
- Preheat your oven to 400°F. Prepare the potatoes according to the instructions above.
- Place the foil packet of potatoes on a baking tray, then add them to your oven. Roast potatoes in the oven for 40 minutes, then remove and open the foil.
- Remove the thyme, add in more butter and seasoning, then return to the oven with the foil open. Cook for another 15 minutes or until golden brown, just like you would when making diced potatoes on the grill in foil.
- Serve, and enjoy!
Foil Packet Potatoes Tips
- Always use heavy-duty aluminum foil when cooking on the grill.
- If using larger potatoes such as Russet or Yukon Gold, cut your potatoes into 1.5-inch chunks or slice the potatoes.
Type of Potato to Grill in Foil
- Fingerling Potatoes: I love using fingerling potatoes as they are small, soft potatoes perfect for grilling.
- Yukon Gold Potatoes: Yukon gold potatoes are so soft and buttery. They make a great choice for grilling in foil.
- Red Potatoes: Second best to Yukon Gold. They’re soft, but not quite as buttery.
- Russet Potatoes: I recommend you don’t use russet, but if it’s what you have on hand, make sure to cut it into pieces about 1.5-inches in size.
- Sweet Potatoes: You can roast sweet potatoes (yams) on the grill in foil, too! Try using the seasonings from my How to Cook Sweet Potatoes guide.

- 1.5 lbs. Baby potatoes chopped into bite size pieces
- ½ Tbsp. Olive oil
- 1 Tbsp. Dried rosemary
- 3 Sprigs fresh thyme or 3 teaspoons of dried
- 7 Whole garlic cloves or 2 tablespoons of powdered garlic (no need to peel)
- Pinch Sea salt and pepper
- 2 Tbsp. Butter
- 4 tsp. Fresh parsley (optional)
Instructions
- Preheat the grill to medium, or oven to 400°F. Cut baby potatoes into bite sized pieces, then place in a bowl and mix with olive oil, dried rosemary, a pinch of sea salt and pepper, and whole garlic cloves or powdered garlic.1.5 lbs. Baby potatoes, ½ Tbsp. Olive oil, 1 Tbsp. Dried rosemary, Pinch Sea salt and pepper, 7 Whole garlic cloves or 2 tablespoons of powdered garlic
- Transfer the potatoes to a piece of foil, around 28 inches in length. Bunch the potatoes in the middle of the foil. Place thyme and cubed butter on top of the potatoes.3 Sprigs fresh thyme or 3 teaspoons of dried, 2 Tbsp. Butter
- Bring the edges of the foil together and wrap, tightly sealing all the way around. If the foil isn't long enough to wrap properly, then double wrap with second piece of foil in the opposite direction.
- Place the foil directly onto the grill or, if roasting, place on a tray before putting in the oven. Grill or roast for 40 minutes, then carefully remove from the grill or oven and open up the foil.
- Remove the thyme and add in the rest of the butter and season again, then return to the grill or oven with the foil open and cook for a further 15 minutes or until golden brown. Top with parsley (optional) , and enjoy!4 tsp. Fresh parsley (optional)

Actually a question. Hav you ever made these and put them in fridge overnight to grill next da Or will potatoes get brown?

Hi Joyce! You can prep everything the night before by adding the potatoes to a bowl of water. Cover them completely. In the morning, dry off the potatoes and assemble them with your other prepped ingredients in the packets. Otherwise, they will get brown in the fridge. Thank you!

Made these tonight in the oven to have with roast beef & they were soooo good! I’ve made foil baby potatoes before but these were to die for. I normally just use olive oil but the butter put them over the top. They were so moist & slightly crispy on the edges from cooking that last little bit with the foil open. Perfect. Can I boil the potatoes to make them cook a little faster?

Hi Elaine! You could absolutely parboil the potatoes if you’d like. I would parboil for about 10-15 minutes or so, then grill another 15 minutes in the foil, then the final 15 with the foil opened. Check and make sure they’re fork-tender before you take them off the heat.
