Where do I even begin with this amazing recipe?
I’ve made plenty of steak dinners, from chuck steak on the grill to porterhouse, ribeye, and the most amazing picanha, but these juicy garlic butter steak bites are easily one of my favorites. My family loves them and is constantly asking me to make them for our meals together with a side of potato wedges!
The best thing about my sirloin tips recipe is that it takes just 15 minutes to make using simple ingredients. Complete with herb garlic butter sauce, sirloin beef cubes, a simple steak seasoning blend and fresh parsley, you can’t go wrong serving these steak bites for a fun meal.

Steak Bites Ingredients
- Olive Oil: I recommend using extra virgin olive oil, light olive oil, or, alternatively, avocado oil.
- Sirloin Steak: Cut into cubes. You can also use other cuts of steak depending on what you like best.
- Butter: Salted butter is recommended. If you only have unsalted butter, feel free to taste test and add more salt later as necessary.
- Garlic: Fresh garlic cloves, finely chopped. You can use garlic powder if you’re in a pinch, but I recommend fresh cloves.
- Parsley: Finely chopped, for the garlic butter and garnish. Optional, if you want to leave it out.
- Salt and Pepper: Kosher salt and freshly cracked black pepper work best. You can also use sea salt flakes.
How to Make Steak Bites
- Pat sirloin steak dry. Cut into bite-size cubes.
- Season the steak generously with salt and pepper on all sides. Give each piece a good coating.
- Heat olive oil in a cast iron skillet over high heat. Once hot, add steak in a single layer. Make sure not to overcrowd the pan! It’s best to cook in batches so the steak sears properly.
- Cook steak cubes for about 2 minutes without stirring. After 2 minutes, give them a stir and cook for a few more minutes until browned on all sides and done to your liking. Be sure to use a meat thermometer and my temperature chart for beef to track the internal temp of the steak.
- Remove steak cubes from the skillet to a serving dish. If cooking in batches, be sure to add a bit more olive oil to the pan before cooking the next batch.
- Mix together softened butter with minced garlic and fresh chopped parsley until completely combined.
- Reduce the heat to medium once done cooking the steak. Add garlic butter to melt the butter, then pour over the steak bites. Toss the steak with the butter sauce.
- Garnish with fresh parsley if desired, and enjoy!
Garlic Steak Bites Tips
- Do not over over-crowd the steak in the cast iron skillet. You want each piece to get a nice crisp browning on it.
- Pat the steak dry before cooking it. This will give it a better sear.
- Season generously with salt and pepper. I like to use sea salt! You can also use your favorite steak seasoning.
- Cast iron skillets work best. But, if you don’t have one, a large non-stick skillet works just fine.
- You can also make this steak bites recipe in the air fryer.

- Make it with cowboy butter instead!

- 2 pounds sirloin steak or your choice of cut
- kosher salt or sea salt flakes; to taste
- black pepper to taste
- 2 Tablespoons olive oil
- 1 Tablespoon fresh parsley chopped, for garnish

- 1½ cloves garlic minced (or 2 small cloves; adjust according to your preference)
- 1 Tablespoon fresh parsley chopped

Notes
- Be sure to pat the steak dry in step 1 to ensure a nice sear.
- Season generously! Sea salt or kosher salt works best.
- Cast iron skillets are ideal for cooking steak bites, but use whichever large non-stick skillet you have on hand.
- Cook in batches and don’t overcrowd the pan. Overcrowding will lead to the steak not browning properly.

I enjoyed this. I used filet. To me filet is bland normally because of the lack of fat and not my favorite but got at a good price. Only issue i had and it was my own fault is, I added to much garlic to the garlic butter and i love garlic but i added to much. I know you said 3 cloves but added more. I had this with the potatoe wedges of yours and all was awesome. Thank you for the recipe 😉
