"London Broil" isn't actually a cut of meat, but rather a method of preparation. That said, in grocery stores across the U.S., the label "London Broil" usually refers to one of the following lean, tough cuts:

- Top Round Steak(most common)
- Lean, affordable, and benefits from marinating and quick, high-heat cooking.
- Flank Steak
- Slightly more flavorful, also lean, and great when sliced thin against the grain.
- Sirloin Tip (less common but used)

Best Marinade for London Broil
- Balsamic Vinegar: As a substitute, you could use red wine vinegar with a tiny amount of added sugar, but the flavor won't be the same.
- Soy Sauce: You can also use gluten-free substitutes such as gluten-free soy sauce, tamari shoyu, or coconut aminos.
- Worcestershire sauce: If you're keeping things gluten-free, make sure to check that your Worcestershire sauce is gluten-free.
- Olive Oil: Extra virgin olive oil and light olive oil both work.
- Lemon Juice: Only fresh lemon juice will do! Bottled lemon juice is not the same and will not taste as good. Fresh lemons provide the proper acidity in your marinade.
- Garlic Powder: Granulated garlic will work too. Fresh garlic can be used too, but garlic powder is more convenient and avoids any burning risk when cooked.
- Brown Sugar: Light brown sugar and dark brown sugar both work, but keep in mind that dark brown sugar has more of a molasses flavor than light brown.
- Powdered Ginger: Again, while fresh ginger could be used, powdered ginger is more convenient. If you don't have ginger, you can leave it out, but it will alter the flavor.
- Red Pepper Flakes: For a little kick of spice! If you want no spice, leave out the red pepper flakes. Alternatively, if you love spice, you could add a bit more.
- Salt and Pepper: Kosher salt or sea salt flakes and freshly cracked black pepper work best. Season to taste.
This makes enough marinade for a 2-pound London Broil steak and enough to make sauce to go on top.
How to Cook London Broil on the Grill
Create the marinade
Whisk together soy sauce, balsamic vinegar, powdered ginger, Worcestershire sauce, olive oil, fresh lemon juice, garlic powder, brown sugar, and red pepper flakes to form the London Broil marinade.
Add marinade to a bag
Pour the London Broil marinade into a zip-lock bag.
Shake it up and marinate
Add the steak to the bag with the marinade. Shake well, push out any excess air, and then refrigerate to marinate for at least four hours up to overnight.
Season the steak
Remove the steak from the bag. Keep the marinade bag; you can use it later to make a sauce by boiling it down (instructions included). Season the steak with salt and pepper on both sides to taste.
Add it to the grill
Add the steak to the grill at 400°F for 5 to 8 minutes on each side depending on the thickness of the meat. High heat works well for grilling London broil. For best results, use a meat thermometer and follow my temperature chart below.
Boil the sauce (optional)
While the steak cooks, pour the marinade into a skillet over medium heat. Let it boil for 5 minutes, then lower it to a simmer and let it thicken until it forms a sauce. Boiling the sauce is essential, as this will eliminate contamination from marinating the raw meat.
Serve and enjoy!
Remove steak from the grill once ready, about five degrees below your desired degree of doneness. Cover it with aluminum foil and let it rest for 10-15 minutes. After resting, slice thinly against the grain and serve with sauce. Enjoy!
How to Cook London Broil in the Oven
Cooking London Broil in the oven is one of the best ways to achieve a beautifully caramelized crust and juicy, tender interior—no grill required! Follow these easy steps for perfect results every time:
- Marinate the Meat
Let your London Broil soak in a flavorful marinade for at least 4 hours (overnight is even better). This helps tenderize the meat and infuse it with bold flavor. - Bring to Room Temperature
