What is London Broil?
London Broil refers to both a technique for cooking beef and a specific cut of beef. Top-round steak and flank steak are the most common cuts sold unlder the name “London Broil”, because they marinate well.
The London Broil technique involves marinating, grilling, and thinly slicing beef, which will transform even the toughest cuts of meat into a tender, restaurant-quality meal.
London Broil Recipe Ingredients
- London Broil Steak: At your local grocery store or butcher, pick up a flank steak, sirloin tip steak, or top round steak, or any steak labeled as a “London Broil” cut.
- London Broil Sauces: Worcestershire sauce, soy sauce, balsamic vinegar, olive oil, and lemon juice. These mix together with a blend of seasonings to form the marinade.
- London Broil Seasoning: Garlic powder, brown sugar, powdered ginger, red pepper flakes, kosher salt or sea salt flakes, and black pepper form the seasonings for the marinade.
- Fresh Parsley (optional): Adds a pop of color and fresh flavor to the dish!
How to Cook London Broil
- Whisk together soy sauce, balsamic vinegar, powdered ginger, Worcestershire sauce, olive oil, fresh lemon juice, garlic powder, brown sugar, and red pepper flakes to create the London Broil marinade.
- Pour the marinade into a zip-lock bag, then add London Broil steak. Shake well and refrigerate to marinate for at least 4 hours up to overnight.
- Remove the steak from the bag and set it aside. Keep the marinade! You will use it later to make a sauce. Season steak with salt and pepper to taste on both sides.
- Add to the grill at 400°F for 5 to 8 minutes on each side. High heat works well for this recipe. Use a meat thermometer for best results.
- Meanwhile, pour steak marinade from the bag into a skillet over medium heat on the stove. Mix and let it simmer and thicken until it forms a sauce.
- Remove your steak from the grill, cover it with aluminum foil, and let it rest for 10-15 minutes. After resting, slice thinly and serve with sauce on top.
How to Grill London Broil
Create the marinade
Whisk together soy sauce, balsamic vinegar, powdered ginger, Worcestershire sauce, olive oil, fresh lemon juice, garlic powder, brown sugar, and red pepper flakes to form the London Broil marinade.
Add marinade to a bag
Pour the London Broil marinade into a zip-lock bag.
Shake it up and marinate
Add the steak to the bag with the marinade. Shake well, push out any excess air, and then refrigerate to marinate for at least four hours up to overnight.
Season the steak
Remove the steak from the bag. Keep the marinade bag; you can use it later to make a sauce by boiling it down (instructions included). Season the steak with salt and pepper on both sides to taste.
Add it to the grill
Add the steak to the grill at 400°F for 5 to 8 minutes on each side. High heat works well for grilling London broil. For best results, be sure to use a meat thermometer and my temperature chart below.
Boil the sauce
While the steak cooks, pour the marinade into a skillet over medium heat on the stove. Let it come to a boil for 5 minutes, then lower it to a simmer and allow it to thicken until it forms a sauce. Boiling the sauce is important, as this will get rid of any contamination from marinating the raw meat.
Serve and enjoy!
Remove steak from the grill once ready, about five degrees below your desired degree of doneness. Cover it with aluminum foil and let it rest for 10-15 minutes. After resting, slice thinly and serve with sauce. Enjoy!
Tips for Grilling London Broil
- Meat temperature is always more important than exact timing. Make sure to use a meat thermometer to check the internal temperature of your London Broil before removing it from the grill.
- To exactly reach your desired degree of doneness, remove the steak from the grill five degrees below your target temperature. As the steak rests under the foil, it will reach your desired doneness and not go over.
- Allow your steak to rest for 10-15 minutes before slicing it. This helps it come to temperature (if you pulled it off early as instructed) and also locks in the juices.
- Always cut against the grain when slicing steak. The grain is the lines of muscle running through the meat. Cutting against the grain allows for more tender slices of steak. Make sure to use a nice, sharp knife.
London Broil Temperature Chart
Find your ideal London broil internal temperature using my chart below. This is for a steak that is 1 to 1½-inches thick.
- Rare: 5 minutes on each side
- Medium-rare: 7-8 minutes each side
- Medium: 10 minutes on each side
- Well done: 12 minutes on each side
The USDA recommends steak the internal temperature should be a minimum of 145°F. I always refer to my steak temperature chart to be certain.

Grilled London Broil Variations
- Use vegetable oil instead of olive oil if desired.
- Freshly minced garlic or garlic paste can be used instead of powder.
- Red wine vinegar is a good replacement for balsamic vinegar.
- Honey can be used instead of brown sugar.
- Ground spices can be used instead of ginger; use allspice, cinnamon, or nutmeg.
