Breakfast Casserole with Sausage Ingredients
- breakfast pork sausage
- eggs
- heavy whipping cream
- sea salt
- ground pepper
- onion powder
- paprika
- Colby-jack shredded cheese or shredded cheddar cheese
- mozzarella shredded
- crescent rolls (2 tubes)
- green onions thinly sliced
Instead of cubed-up bread like most bread pudding casseroles, my sausage and egg breakfast casserole uses crescent rolls to pack in that delicious buttery flavor. You don’t even have to pre-bake them!
Breakfast Casserole Recipe
- Preheat the oven to 375 degrees F. Coat a 9-inch x 13-inch baking dish with non-stick spray. Set aside.
- Brown sausage in a large skillet over medium-high heat until browned all the way through, about 6 to 8 minutes. Be sure to break up the sausage as it cooks. Remove from heat and strain off the grease. Set aside.
- In a large bowl, whisk together eggs, half-n-half, salt, pepper, onion powder, and paprika until fully incorporated. Add cheese and stir to combine. Set aside.
- Open crescent rolls and roll according to package directions. Arrange 15 rolls in a prepared baking dish in three rows with 5 rolls in each row.
- Add sausage crumble to the baking dish, spreading it evenly over the rolls.
- Pour the egg mixture over the rolls and sausage.
- Bake for 25 minutes. There is no need to cover it with aluminum foil. Carefully remove from the oven. Allow sitting for 5 minutes.
- Sprinkle top with green onions, if desired. Serve warm.
This is my favorite Christmas morning breakfast! I usually make my kids favorite, candied bacon and air fryer breakfast potatoes too!
Made this for breakfast today and absolutely loved it. I added salsa to my own plate . Loved every bite!

- Feel free to add your favorite veggies to this recipe.

I love this casserole. Perfect for the busy holidays.

Is this something I can make the night before? I’m looking for a Christmas morning brunch recipe that still allows me to enjoy my family 🙂
Marion Myers says
Hi Elizabeth, to make this ahead of time, we recommend preparing the sausage the night before and getting the egg mixture ready, then all you have to do is assemble in the morning and pop in the oven. I hope you enjoy this recipe as much as we do! Happy Holidays!
susanmp14 says
In step 3 you said add cheese and stir to combine. Which I did. Then in step 5 you say spread cheese over top. Which is it?
Marion Myers says
Sorry for that error, Susan. Adding the cheese and stirring is correct. I removed the incorrect info. Thanks for pointing that out! Happy holidays!
Cindy says
The recipe says to roll the crescents, but they don’t look like rolls in your pictures. Do you roll and press them down or just press dough in the pan?
Em Beitel says
Hi there, Cindy! We rolled them out into the baking dish – just pressed the dough into the pan.
